This is a very special cake- a Parsi Mawa Cake! The surprise ingredients of this Parsi Mawa Cake are Mawa or Khoya! Along with mawa, cardamom powder is used instead of vanilla essence to flavour the Parsi Mawa Cake. This is a Mumbai special Parsi Mawa Cake that can be found in many old time bakeries and Irani cafes across Mumbai.

Recipe :
Mawa Cake
Preparation time: 20 minutes
Cooking time: 45 minutes
Serves: 6-8
Ingredients:
2 cup Refined flour
1tsp Baking powder
1 tsp Cardamom powder
Pinch of Salt
150 gms Butter
1 ½ cup Sugar
200g Mawa, grated
4 Eggs, beaten, at room temperature
150 ml Milk
2 tbsp Slivered Almonds
2 tbsp Pistachios , sliced
2 tbsp Dried rose petals
Method:
Preheat the oven at 180 degrees C.
Line a 9" pan with butter paper and set it aside for later use.
In a large bowl, using a electric hand blender, whisk together butter and sugar for 4 to 5 minutes till the mixture is creamy, pale, light and fluffy. Add crumbled mawa and blend again..
To this mixture, add one egg at a time and whisk till well combined and smooth.
Next, sieve together 1 cup all purpose flour, baking powder, cardamom powder into the bowl and fold lightly.
Add the milk and fold in. sift in the remaining flour and mix lightly.
Pour the batter into the prepared pan and even out the top. Sprinkle the almond and pistachio flakes around the surface.
Place the tin in the preheated oven to bake for 45 minutes or till a skewer inserted in the centre of the cake comes out clean.
Remove the cake from the oven, allow it to cool and serve garnished with rose petals.
