Thank you, Amanda. No guilt in raising the red flag! People who don't do content creating have no clue on how hard it is to create interesting videos. This is the first year that I have been doing videos on "the challenge" and it has been twice as difficult as last year when I was doing the challenge but not making videos about it. Then there is the editing. I don't have a job outside my home and it is just my husband and I but it has been so time-consuming to put those videos together. I need to do my seed starting and I usually video that. It is still February and in Michigan, we can't plant out until May but there are some very slow growing seeds that need to be started in February. Appreciate your honesty and looking forward to your new property development. Mary Born, ND

Happy belated birthday! I wasn't very diligent in sticking with the pantry challenge either. I did, however, manage to start meal planning more from what we have on hand instead of just winging it on a daily basis. I have started my sweet potato slips for the past 3 years. I did some in jars of water and some buried in potting soil. The ones in potting soil grew better than in the jar. For the ones in jars, I broke the slips off the potato, stuck them in a jar of water until they grew a few roots, then set them in small pots of potting soil. The few times I took them from the potato and planted them directly in the garden they died...so I took the extra steps to ensure the slips grew a good set of roots.

You made it a lot further in the pantry challenge then I ever could. Now, I only go to the grocery about every three weeks and it’s usually only fresh produce. Be blessed dear lady!

I made the goats cheese and made blueberry vanilla compote to serve with it. It was amazing for those of you who have not tried it you don’t know what you’re missing. Thank you so much Amanda

Happy belated birthday Amanda🎉 I tried growing sweet potato slips like you did in my deep kitchen window but my cats kept jumping up there and chewing off the sprouts 😅. So maybe I’ll try doing it in my greenhouse this time 😊

Just curious. What would have made the challenge more “doable” for you? Do you need one night to eat out each week? Do you need $20 each week at the store? It has to be hard to not have your kids favorite treats. It seems to me that you are eating from your stored food on a daily basis for the most part. Maybe the part you could improve is using up things that have been hanging around for longer than you like. Maybe making up new rules for next year would make it more your own. You’ve met the basic criteria, just adjust to make it yours. Deb from Florida
