This is one heavenly fruit cake. It is so light and juicy, refreshing and delicious that it has no flaws.
You can make it with any fruit, you can make it as a cake and steal this crust for all possible fruit cakes and cakes because it is divine.

Ingredients for the crust:
6 eggs
180 g of powdered sugar
120 g of plain flour
80 g of starch or corn starch
half a bag of baking powder (8 g)
1 lemon - peel and juice
50 ml of oil (olive or sunflower)
Ingredients for the filling:
400 g of cream cheese
250 ml of whipping cream
150 g of powdered sugar
Juice of 1 lemon
fruit as desired, about 400 g
powdered sugar
Preparation
Prepare 6 eggs and separate the whites from the yolks.
Whip the egg whites until foamy and start adding the powdered sugar spoon by spoon.
Beat until you get a firm and stable mass.
In the meantime, mix 120 g of smooth flour, 80 g of thickeners or corn starch and half a bag of baking powder (8 g).
Add egg yolks to the whipped mass with egg whites and sugar and mix with light movements with a hand whisk and not with a mixer.
Add 2 tablespoons of flour and starch mixture and mix.
Add the juice and zest of one lemon.
Mix and add a little mass with flour again.
Stir and add oils.
Stir, add the rest of the mass with flour and mix until you get a fine mass without lumps.
The reason why we do this is that at no time should the mass for the crust be too firm and not too liquid, because in this way we lose the air that has remained in the eggs and sugar.
Prepare one large casserole dish. The size of the pan I use is 43x37 cm.
Grease the pan with butter and sprinkle with flour.
Shake the pan and return the excess flour to the bag.
Gently transfer the crust mixture to the pan and level it well.
Bake the crust at 160 °C for about 15 minutes, depending on the power of the oven.
When you take the crust out of the oven, leave it in the pan to cool completely.
When the crust has cooled, cut off the edges and cut it in half lengthwise.
For the filling, mix the juice of 1 lemon and 150 g of powdered sugar.
Add 400 g of neutral young cream cheese for spreading and mix.
In a separate bowl, whip 250 ml of whipping cream and when it is whipped, add it with light movements to the bowl with the cheese and sugar.
Prepare the fruit as desired.
If you use canned fruit, you should strain it well so that there is not even a little liquid.
Put one crust, cover it with a little more than half of the filling, put the fruit and cover it with the rest of the filling, and put the second crust.
Sprinkle the cake generously with powdered sugar and leave it in the fridge at least overnight.
If the sugar has melted on top of the cake, the next day, sprinkle the cake again with powdered sugar.
