The Unhappy Orchestra (this is different in the anime) in the game the noodle game was causing him to change emotions and go crazy giving everyone noodle afros. When parappa beats him he goes back to normal. In the anime he just has a sort of short-temper personality and a flamboyant personality which change from time to time depending on how he feels I guess
