My grandmother not only used a pastry cloth under the pie crust, but she also used a rolling pin cover. You can still find them in any of "the Amish stores". You can roll the dough onto the rolling pin to move it to the pie pan. My grandmother was very French. Love your cookbook❤.

I have a big plastic type square that I roll my pie crusts out on. It has several size circles on it to show you what size circle you should roll it out to to fit your pie pan. It is easy to clean up.

I remember these kitchen shots. So good. As a tip, I want to tell you about vitacost for your spice and herb needs, as well as other healthfood store items. We buy our cinnamon and other spices and herbs in 1 pound bags. Organic,often frontier herb brand. No comparison to big box spices. So much fresher and tastier. Also they will be shipped right to you, which I know will be helpful.
