1 TBS baking powder
Muffins-
3 cups AP flour
4ts baking powder
3 heaping spoonfuls sugar
1 ts salt
1 egg
1 1/2 cup milk
4 TBS Melted butter

I remember as a child being kept home from school because there was no food for our family of 4. We didn't have the money to keep a stocked pantry. My gram would come stay with us for a couple of weeks and helped out with money from her social security. Being poor as a child has given me a respect for budgeting and being frugal. I am so happy for people watching you and gaining ideas on how to feed their family on less money. Just love you. Sending hugs.

Yeah Brooke has shared her story thousands of times why food insecurity is so important to her. Once you grow up in it as an adult it gives you a whole new perspective on food. It drives me crazy when “you” are getting assistance from the government and 90% of your food is snacks/junk food. Where’s the healthier foods that “you” can purchase and still feed your family.

I hope your comment about receiving assistance and buying snacks was not meant for me. People caught in a cycle of generational poverty don't know how to shop wisely. They buy snack food for the instant gratification of filling their bellies. I don't think you understand the overwhelming pressure someone faces when they have little money but still have a family to feed.

@@cathytheisen1815 no, I was just speaking in general. I was raised in a low income which my mom never bought snack foods. She taught me how to shop in return I’m a low income family myself. Though those quick snack foods put fuel in bodies, however, knowing what will sustain a fuller bully. One of the “snacky” foods we always had was cracker cereal. After one of our quarterly or bi-yearly shopping trips to Aldi was when we had this. You take your different types of crackers and crumble them up in a bowl and add a little sugar and milk. The crackers we’d have was saltine, graham, and club or even ritz whatever crackers was picked up.

@@amandasnailtasticnails9657 I think I'm much older than you, way before an Aldi or chain supermarket. I'm a young 71 senior. I had a good childhood and watched my mom stretch 1 chicken wing and 1 potato into a meal. We made do with what we had. I stayed in school then got a job and worked hard all my life till retirement. I'm here for you, dear lady, if you ever need someone to lean on. Being kind to people has never set me back. Sending hugs.

I buy lots of canned veggies b/c they are shelf stable and literally lasts for years (way past the age date)--and we do not have a freezer--so, we live off of them...I wait for a sale for 50 cents a can--and then I stock up and we rotate cans to keep the oldest at the front...every once in a long while, I have to throw a can away--but that is not often...you can live on canned veggies (and nothing else) for quite a while...keep a manual can opener handy in case of power failures...dts/usa

Honest to goodness sweet Brooke, I'm positive that I'm not the only follower who would happily watch a video that is an hour+ long!! A lot of the other KZbinrs (cooking/family) that I watch are between 45 min to 1 hr 30 min!! On Jamerrill Stewart's (Large Family Table) channel, if she's doing big batch cooking, those will be at least an hour long and I watch the entire show!! Watching her channel and urs feels like I'm part of the family so I'm in for the long haul!! U are soooo adorable, ur kids are so respectful and love u and the hubs sooo much and ur hubs is a keeper!! U are a very blessed woman for sure!! Thank u for all the diff videos u do!! U most deff are a huge help for those who have a limited grocery budget and u do it with grace and without judgement so, thank u sooo much!! I'm looking forward to Part 2!! Have an awesome weekend!! First off, I don’t care if it’s 1,2, or 3 parts. I’ll watch whatever works for you! Second, it so amazing the foods you can make with flour, milk,eggs, yeast and pantry items!…items that most of us have at home. That plate of muffins would feed my family for breakfast the whole week and then some (We don’t eat breakfast a lot either.) Saves so much money!! Looking forward to watch you have up your sleeve for your week 😊

My daughter's moving into her first post college apartment and first "real" career job, but sort of low wages. She's taking notes when we watch. We figute she'll get multiple dinners, plus can freeze portions if she cooks your ideas, but for one person.

I've made your homemade tortillas after watching a previous video. They were awesome. This is something I never imagined myself doing, making homemade tortillas. They were so good! I made tacos with them and had some left. I made fried apples and put the apples inside a few tortillas. It was amazing!! Thank you!!

In California tomatoes are not inexpensive. When you can find them, they are between a dollar a piece, to $3.00 / #. I do not know why.

Brooke, sweetie, it's your channel. Why are you apologizing and begging forgiveness for cutting a long video into segments? Nobody hates you. If it's an hour and a half long, cut it into 5 or 6 segments. That just means more videos, which is a good thing. I think most KZbin viewers prefer 15 to 20 minute videos over hour and a half videos anyway. I know I do. Calm down, stop stressing yourself out. You have built a loyal following. That didn't happen by accident. We're not mad, we don't hate you and we're not going anywhere.

I got the notification for this at work and I couldn't wait to get home, stretch out in my recliner and watch sweet Brooke!!! It's been so stinking hot and I've been working outside all day!! I feel like a dish rag😂😂 I need wringing out😂😂 I got those Campbell's marinades but haven't used them yet. My Dollar Tree actually has 1 lb packs of frozen hamburger for $1.25!! It actually is ground beef,unlike the frozen beef patties that has beef hearts and soybean filler in jt. I bought 2 lbs and I just cooked it and it's pretty doggone good!!! Also, I don't think you should have to add your eggs and stuff into your total! I mean, it costs you to have those eggs because you have to feed your chickens and your veggies costed you too... you had to buy the seeds, fertilizer etc!!

It is amazing how much money you can save by making your own bread, tortillas, muffins, rolls, etc. You make it look so easy even though I know it took you alot of time to do.

My area doesn't have a lot of grocery store options. I went yesterday to get extra Rice because India is halting rice export because they are losing their rice fields to severe storms. The news said US stores will be having shortages and price increases. Also it is crazy when ground beef ($5.92 per lb.) cost more per pound than babyback ribs ($3.34 per lb) and ground pork ($3.64 per lb). for my area.

Have you tried making corn tortillas? I may try your flour tortillas today! Bread is in my bread machine today. We drink so little milk that I keep powdered milk on the shelf for cooking but I may run by dollar tree.

I absolutely love your videos. They're not only entertaining but also an amazing resource for families that are struggling financially or just want to put some extra money aside every month. Money was TIGHT growing up but my mama always kept us 5 kids fed with some good home cooking. I can still remember her making a huge batch of soup beans on Sunday and stretching them through the week. We ate so many bean and cheese burritos and loved it lol. Your boys are blessed to have such a knowledgeable and wonderful mother. I will always be thankful for mine and am still amazed by the magic she created in the kitchen. ❤

I reuse a spice bottle and fill with homemade cinnamon sugar. I sprinkle the tops of my muffins PRIOR to baking. That helps make them look prettier. Just wanted to save you a step!

Brooke- love your videos so much. Always brightens my day when is a new one. I learn so much. I used to have a basic muffin recipe that I got from The Tightwad Gazette in the early nineties. I had taped inside my kitchen cabinet. Some were with strawberry preserves or banana and pecan or berries. So versatile. Kids all grown now. I use a versatile muffin recipe too, I can make plain muffins or add fruit and my family loves them. A couple years ago when my mother was living with us(she had severe dementia) I made 3 dozen banana muffins with cinnamon sugar on top of them one morning for breakfast and we had a few leftover and I covered them and left them on the counter. Well my mother was up and down one night for awhile and I got up and went to look and see what she had been doing in the kitchen and found 5 wrappers laying on the kitchen counter and 1 lonely muffin left on the platter. The next morning I got up early as usual and went out to take care of my chickens and garden and when I came back in my mother was sitting at the kitchen table with my father in law(also had dementia and lived with us) and she was eating the last muffin 😂 I asked her if she was tired of them and she looked at me funny and I then explained to her that she had ate 5 during the night to which she said “really?, well they are so good” and then she giggled. Needless to say I made them a lot while she lived with us. Recipes like that are very important to have, even when you don’t have a lot of money for groceries and you have a couple of bananas, an apple, a few blueberries in the freezer you can throw it all together and your family gets to feel special.

I have to say, I am getting so many ideas from your channel and Facebook group. I did a stock up at dollar tree yesterday because one of your viewers mentioned real ground beef being there. I found some fantastic pork chops too! No eggs still at my dollar tree stores but I saved so much on meat, I can spend .27¢ more for my Walmart eggs

She is not wrong about all of those things she picked up. Checking clearance items in the grocery store is a huge budget saver. Check the prices of the cans and frozen, if they are the same size and you have room in the freezer, choose the freezer ones. I have actually canned my own produce from frozen ones because THEY TASTE BETTER.

I buy the Chicken Leg Quarters at Walmart. They're usually around $7.90 for a 10lb bag. I can make that stretch for 4 meals. I really enjoy your budget recipes. Especially, with the prices being so high.

This is a great video! I think you should do it again but also using what you already have because some of us may have a tight budget but we still use what’s already in the house and stocking up is what helps us keep our budgets low when we need too! I am excited for part 2! Have an awesome day!!
