You two are cute. But if you plan to have a family one day, like real family, not “kids will be raised somehow” somebody will have to drop this config where other will be forced to fly CAT III Single. Unless you work in high value airliner, you’re risking a lot. Or maybe i’m wrong...who knows. But my 23yrs in aviation from no name companies to THE COMPANY, hundreds of pilots, cabin crew, mechanics and they all had similar (if not the same) MEL restriction... Stay safe and enjoy. Real pleasure to see that elan.
