I must say, ur energy/ personality is a major plus when dealing with this subject matter. As an animal lover AND having to change the way we do life ....this is so difficult for me. This is the first rabbit I cooked -- my takeaways: the meat was a bit firmer but otherwise very similar to chicken; it was drier than most chicken (but I may have overcooked it a bit). This was a store bought rabbit and at $6.99/lb, was about 3 times the cost of a chicken -- given the similarity in taste not worth the price differential. I suspect the store price reflects the lack of popularity and if one were raising rabbits, they would be similar in price to chicken. Again, thanks for a great video and I'm looking forward to exploring more of your content.

@@jimtroester71 interesting I've never made that dish but we find that rabbit is a softer texture than chicken! It can't be subbed in every recipe and do well, because rabbit lacks a lot of the fat chicken has, it is usually cooked at a lower temp for a longer time, often covered with foil or some kind of sauce or liquid to help retain moisture. It definitely is not worth the price unless you raise it, in my opinion!! We sometimes will sell 2.5-3lb rabbits for $15 and people think that's high. That's better than market value. Last time I saw it for sale it was 7.99/lb!

The sharp bones on the legs is exactly why I don't snip the legs the way you do when processing them. Cut bones are sharp bones. Once you skin down the rabbit, it's simple to just dislocate those joints and cut through the tissue, so you just have the full, cartilage ended bones. It really only takes a couple extra seconds to bend and dislocate the paws from the legs.

We did have a minor scare but I can't tell exactly what happened . We got a peek of blue sky through a storm and I went outside to check it out and heard the tornado siren. I went inside to get the kids (my storm radio didn't say anything)and when we were down there all closed up I didn't see anything except rain on the radar. No warning or even a tornado watch.

South Africa from my urban beach backyard farm. Thank you for all your advise. I do agree with all your methods as this is the only senseble way to do things. I desperatly had to to feed my self and ended up +- the same way as you. After a lot of desperatly hard work and 4 years later i am ok. I am to old now and just try to maintain wat i have. Yes on over cast days solar power is not good for any cooking or caning and the freeser's get's priority. I have a tiny wood stove, and a alcahol stove. The alcahol i get from fermenting my over ripe bananas and other frute. The hart of the destiled i keep for medsine if needed. 🥀

I vacuum bag all my meat that I freeze. Protects from freezer burns and drying out. I have meat in the freezer that’s more then 2 years old and in vacuum bags they stay fresh. I like defrosted them two ways. One in the fridge nice and slow, but if your in a hurry. I put the whole bag in water.

If I'm packaging say, 3 or 4 rabbits, I put all the forelegs in one package, rear legs in a second, saddles (what you're calling backstraps) in yet another. Reason is there's so much more meat on the rear legs and saddles than on the forelegs that if cooked together, by the time the rear legs & saddles are cooked, the forelegs may be overcooked. A guy showed me that years ago, he was right, & I've been doing it this way ever since. Try it, I think you will like it better, too. Thanks for the video, very well done!

Have you tried pressure canning the back strap? I'm used to canning chicken and find that the bones can become brittle and hard to retrieve. I'm worried that the many bones of the spine will turn to mush if I pressure can, but you may have had more success? Btw, thank you so much for all your informative and helpful videos. When you let the rabbit rest do you do just plain water or should you do like a salt water soak and how long after should I put it in the fridge to set

We let them soak in salt water until we package them up for the freezer. Sometimes this is just 1 day (that's all that's needed for rabbit) up to a week. I wouldn't put rabbit in the fridge uncovered. Water or plastic bag is fine!

1 day, they are small. Cold makes them hard to move so if the limbs are not moving well after one day don't worry. The meat is tender after 24h.

We use the Presto canner for low acid foods and a fruit saver steam canner for high acid foods! I LOVE my steam canner!! Really, I love both canners but the steam canner is much better than a waterbath canner!

Saving this video for after I process my first rabbits. I have 7 of them that are 9 weeks old. I'm not sure if I should process now, or wait another week or two so they can gain a bit more meat. They're California rabbits, but I feel like they're so little at 9 weeks. That and I'm a little nervous about the processing. I've never done it before and really wish I had someone to walk me through it.

Sometimes they can look little but weigh a good deal. At 9 weeks they should be 4.5 or 5 lbs. If you've got the feed and time it doesn't hurt to take them out longer. They don't get tough as they age.

I don't want to wait too long and have them end up getting tough because I've read a lot of things saying if you wait too long, they become tough. I've also heard it gets harder to process them too, that the connective tissue is stronger making it harder to skin them. I don't want my first attempt to be too difficult. I have 7 9 week olds, 5 5 week olds, and she just had another litter 3 days ago. I have a colony set up, but I moved the buck into a cage in the colony because I don't want my doe getting too worn out from having so many babies back to back. I haven't counted the new litter, but by just looking in, I'm thinking she may have had at least a dozen. I put the 9 week olds with the buck so momma isn't fighting all of them for resources. I want to build a separate side for the males to also have their own colony. I tried sexing them, but at 9 weeks, either they're all girls or I'm just not good at telling the difference. I tried checking the buck for comparison, but he's mature and very obviously male. 😂 Is it true that they can start reproducing at 12 weeks or is it a bit longer for California rabbits? I don't want a bunch of inbred babies, but I also don't want a separate cage for every single rabbit either. 😂

@@kraziecatclady yea they can breed at 12 weeks! And you'll even see females mounting each other so that behavior isn't a good indicator either. They don't get tough with age, males are harder to skin no matter what but it's not like it's the worst thing for sure!

We rest for at least 1 day but up to a week in a salt brine. But you can rest the meat just in a bag too but I'd always keep it covered and in the fridge. The hairs we rinse off in the sink. There's not a lot, the rabbit is skinned when butchered.

I usually do around 20 at once. You could try a colony setting for 80

@@brentonpickens1872 oh no thats how many kits we grow at a time. We have 4 does and 2 bucks for breeders and they each have around 4-5 litters a year.

Does the breast taste different than the legs? I haven’t had in 35 years and it tasted like dark meat chicken. I’m starting to breed meat rabbits 🐇

Yes! The back of the rabbit (loin) tastes and has the texture of white meat chicken. The legs are more like dark meat in a way but not exactly like chicken either!
