I worked at a Jimmy John's for 2 summers back in the late 00's, and assuming these things haven't changed. The meats are a private label Jimmy John's brand. No idea who their partner is in making them. They come into the store looking just like the large hunks of meat behind your grocery store's deli counter, and are sliced in-house on the same kind of slicer you'd see in the grocery store deli - they also use this slicer on the veggies. The meats could be sliced anywhere from that morning to maybe a day or 2 in advance. The bread, at least in my day, was not par-baked but came to the restaurant as frozen sticks of dough that just needed to be thawed, proofed, and baked.

I think by default they add the red wine vinegar to it in heavy excess and don't do hots. I personally can't stand when places throw mayo on italians

They have set descriptions for each sandwich but I have noticed the staff will always confirm the condiments because, like you said, some people don't want mayo (or onions, etc)

@@Crowes I usually order through the app and you can take off or customize whatever. I like the mayo because it keeps all the other juices from soaking the bread bc I usually don’t eat the sandwich until I’ve had some beers in the evening. Anyway you can get extra of all lettuce, tomato, and onion free plus add jalapeños and the sweet hot Jimmy peppers.
