사랑스러운 느낌의 파스텔 레인보우 마카롱을 만들었어요~
깨끗한 하얀색의 꼬끄에 여러가지 색의 크림이 잘 어울려 깔끔하면서도 귀여운 것 같아요.
크림은 요거트파우더를 이용해 간편하게 만들었는데 상큼한 요거트 맛이라 느끼하지 않고 맛있더라구요.
꼬끄를 하얗게 구우려고 낮은 온도에서 구워 삐에가 많이 올라오지는 않았지만 구움색이 많이 나지 않아 색감은 예쁜 것 같아요.
윗면에 올린 꼬끄에는 화이트 초콜릿으로 장식해 조금 더 멋스럽게 표현해 봤어요.
차갑게 먹으면 요거트 맛이 더 상큼하게 느껴지고 쫀득한 식감도 느낄 수 있답니다~

▶약 20 세트 분량 Piping tip 865
▶재료
아몬드가루 90g
슈가파우더 80g
달걀흰자 70g
설탕 70g
우유 120g
요거트 파우더 (가당) 100g
옥수수전분 10g
무염버터 200g
녹인 화이트 초콜릿
식용색소 (화이트, 블루, 레드, 옐로우)
▶레시피
1. 아몬드가루와 슈가파우더를 섞은 뒤 2번 체 쳐 준비한다.
2. 차가운 달걀흰자를 휘핑하다가 큰 거품이 올라오면 설탕을 3번에 나눠 넣고 휘핑해 뿔이 서는 머랭을 만들고 흰색 식용색소를 넣고 저속에서 약 2분 정도 기포정리를 한다.
3. 가루를 2번에 나눠 넣고 섞고 무겁게 주르륵 흐르는 정도가 되면 짤주머니에 담는다.
4. 오븐 팬에 팬닝하고 평평하게 한 뒤 실온에서 1시간 정도 건조한다.
5. 냄비에 우유, 요거트 파우더, 옥수수전분을 넣고 섞은 뒤 약불에서 저으며 걸쭉해질 때까지 끓이고 다른 볼에 옮겨 담아 식힌다.
6. 건조가 다 되면 135도 예열한 오븐에서 17분 정도 굽고 식힌 뒤 윗면에 녹인 화이트 초콜릿을 뿌린다.
7. 무염버터를 부드럽게 풀고 식힌 요거트 혼합물을 넣고 휘핑해 크림을 만들고 4개로 나눈 뒤 3곳에 식용색소를 넣고 색을 낸다.
8. 랩에 색을 섞어 크림을 길게 짜고 돌돌말아 짤주머니에 넣고 꼬끄에 샌드한 뒤 냉장실에서 차갑게 굳힌다.

90g Almond powder
80g Powdered sugar
70g Egg white
70g Sugar
120g Milk
100g Yogurt powder (sweetened)
10g Corn starch
200g Unsalted butter
Melted white chocolate
Food coloring (white, blue, red, yellow)
