Passion Fruit Cake
This recipe will make a 1.5kg cake or 8"/10" cake
Ingredients for the cake
3 & 3/4 cups all purpose flour
2 & 1/4 teaspoons Pradip baking powder
2 cups granulated sugar
2 teaspoons Pradip Passion Flavour
375g butter/margarine
6 eggs
1 cup milk
1/2 cup passion fruit pulp
Method
Preheat oven at 180C/350F
Grease & dust 3 8'' pans or 2 10" pans
Sift the all purpose flour & baking powder, set aside.
Soften the butter with a mixer until light
Add the sugar and cream until the mixture is light and fluffy.
Add the passion flavour and mix
Add the eggs and mix until well incorporated.
Alternate the flour mix with the milk, starting and ending with flour.
Fold in the passion pulp
Mix until everything is well combined and mixture is smooth.
Pour the batter into your prepared baking pan and bake for 30-40 minutes, or until done.
For the Jelly
3 tablespoons water
1 tablespoon powder gelatin
2 cups passion fruit pulp, blended and sieved
3 or tablespoons caster sugar
Passion Pulp
Method
Sprinkle the gelatin on the water, and let it sit to bloom
Heat the passion juice on low heat and add caster sugar.
Once the sugar dissolves, transfer to a bowl and let it add the bloomed gelatin.
Stir until the gelatin is fully dissolved, then add the desired amount of passion pulp
Refrigerate for at least an hour to start setting. If it sets completely, microwave for 10-15 seconds until a little runny
