Just to close the loop on Brandon's question about whether the mac and cheese only restaurant is still in NYC (at 37:45 ish), there is a restaurant called Sarita's on 1st Ave and 12th St in Manhattan that might be the one he was thinking of! It's great, serves big skillets of different types of mac and cheese

Honestly, 4 minutes in and this is already such a gem. Would be great to have these as podcast versions as well. Always listen to Intentionally Blank on my runs, and I (literally) run through those episodes far too quick. Any plans on ever pushing your non-Intentionally Blank episodes to the podcast platforms? Also: this episode and "The State of the Publishing Industry" were fascinating looks into your journey towards here. It would definitely be great to hear more from Joshua and you in the future.

I like these videos around 50% for the topic of the discussion, and 50% for Brandon getting really cool, intelligent, and interesting people on to talk to and give some exposure to (and vice versa). I'm not sure if I would have ever run into Joshua before, but, man, it has been a joy listening to him! Same for every other guest that's been on one of these!

I associate elbow macaroni with American chop suey. (I do not like Mac N cheese - too cheesey for me). The shell shaped pasta is the most underrated pasta.

Aren't those pictures of "Ziti" actually pictures of penne? Penne was the one with diagonal cuts and groves. Ziti is straight cuts with no grooves.

I despise angel hair. Not because it's bad, it can be great if cooked right but it's NEVER cooked right. It's always overcooked, mushy and slimy. Could I make it myself and do it right? Sure but why bother when I can make virtually every other pasta perfectly and so I never find myself craving angel hair because of how bad it is if not done right?
