Majkl shows us in this video how to make the authentic spaghetti bolognese. Majkl visited Bologna few years ago, and he learned from a local chef how to make a delicious spaguetti bolognese.
First, we will make the Ragout Bolognese, for 6 servings:
6 tablespoons extra virgin olive oil
1 tablespoon of butter
200g pancetta
500g lean ground beef
400g lean ground pork
500g tomato passata or purée
2 tablespoons of tomato paste concentrate
100 ml milk
2 carrots
1 celery stick
1 onion
1 bayleaf
1 glass of white wine
salt and pepper to taste
400 ml of chicken stock
For the pasta, it is traditional to use tagliatelle with this dish, you will need 600g.
I make the chicken stock the following way:
I'll add to the big pot chicken meat, chicken bones, onions, carrots, celery, garlic, bay leaf, thyme, parsley, peppercorns and salt.
I add 6 liters of water and cook at low temperature for 6 hours
