I live in Abruzzo and bought one of these chitarra devices last year. It’s the best pasta you can make, I think. Great texture and goes well with meat or fish sauces. I use it at least once a week, normally Sundays, and love it. I always make the pasta with semolina flour and eggs.

This channel is great. I am of Italian descent and was always around my Grandmother. When I see them make and roll out the dough, it’s what my Grandma did, making pasta. Today I made mini meatballs to have with pasta. So cute Granddaughter hugging her at the end. I miss the old days like this. Not the same! Nothing like Italian Families!

I'm hooked to these videos. One thing I noticed though is that hardly any of the Grannies use herbs. No basil, thyme or rosemary, which was surprising to me.

There's a couple of reasons for this: firstly, it's all about the 'cucina povera', or peasant's cooking, using only a few but very fresh ingredients that are immediately available at the time, and secondly, in a mostly mountainous region like Abruzzo, where it gets very cold for many months of the year, coming by fresh herbs are difficult, and are usually only used in the high summer season. My mother, who is from the high mountains of this region, cooks exactly along these lines.
