This is so BEAUTIFUL !!! This is the way recipes SHOULD be passed on and cooking taught in a family ! This is how I and my siblings learnt how to cook from my mother and maternal grandmother - in the MOST calming, gentle, loving and happy atmosphere (for in other times, my mother was almost always angry, yelling and shouting, and my grandmother sulking) ... Even the men in the house, my brothers, turned out to be EXCELLENT cooks and food lovers !

I have just discovered your channel (and have watched everything already) and this is one of the most emotional videos for me. Thank you so much for sharing, what a wonderful idea. I currently live in the UK but come from Poland, where the tradition of making all sorts of dumplings is also very strong and my grandmother is a master at making them. In fact, 'uszka' (little ears) that we eat with barszcz (beetroot broth) for Christmas is very similar to tortellini, just with a different filling. You inspired me to document her recipes next time I go there for Easter. Thank you enormously, lots of love

It makes you yearn for how tradition is still important throughout the generations, and we do hope that the younger generation never forget the work and deep traditions these grandmothers brought to the table. Its going to be really hard to recreate as the generation of the past worked so hard and now everything is so easy to access in supermarkets, women of today do not want to make the effort of this type of work. However these young ladies have it done to a fine art!! Yummy ..

It's interesting how people incorporate new ingredients into their cooking when they migrate to other regions. Having lived in Wales, Nonna Albina adds Cheddar cheese to her recipe. A purist might scoff at this, but I say if it works, use it!

This IS a Blessing🙏🏾 I didn’t have either of my Grannie’s influence to this degree. They Both passed; my Paternal Granny when I was 5, and my Mother lost her Mother when she was 13. As a young child; I was the one who sat in the kitchen each time my Mother would cook. Asking questions about ingredients, quantities etc. Those times I had with my Mother are priceless Family Jewels! NTM; I got all of the “Culinary Secrets” to all of my Mom’s #masterpieces. I love watching these videos! The funny thing is, while watching them, I remembered my babcia has two recipes for noodles. Sadly she passed last year, but every time I made them for her, she always lit up. I loved making her happy with homemade, traditional Polish food.

hi Denise, granddaughter Nadia works in the wine business so they used left over wine - but good quality. Cheap wine will show in the final flavour. I Have a feeling there was a bottle of an Oregon Pinot Noir on the table. If you wanted to an Italian wine, a Montepulciano d'Abruzzo would do - soft tannins low acidity and aromatic. best wishes, Vicky

Hello! I do a veggie filling every year by sweating finely chopped shallots with garlic and then finely chopped chestnut/wild mushrooms in copious olive oil. I then add this to the mashed flesh of a butternut squash that has been roasted for hours and mix it all together with a lot of finely chopped cooked chestnuts, fine breadcrumbs, much parmesan, and finely chopped sage that was fried in olive oil (or butter), and the sagey oil. Sometimes I add some concentrated porcini stock, or amaretti crumbs, even a little miso - just whatever tastes good! All quantities are ‘lots’! from the pasta granddaughter on the right hand side at the start

hi Sam, I haven't come across a recipe for fish filled ravioli; I think the challenge is making the mixture dry enough? salt cod could be a contender... there are of course sea food condimenti to go with macaroni, spaghetti, gnocchi and so on. Cheddar is a great cheese and any Italian will tell you that! Funny, cheeses are loved regardless of origin. A good cheese is a good cheese.
