🇮🇹 Italian Cooking Rustic & Simple 🇮🇹
Pasta Primavera
1 gallon water
1 Tablespoon salt
1/2 pound Spaghetti, slow dried if possible
2 zucchini, yellow
Thyme, fresh 1/4 cup leaves only
(you can use up to 3/4 cup fresh Thyme)
1/4 cup extra virgin olive oil
1/2 cup Parmesan cheese grated
1/2 cup Romano grated
Bring water to boil, add salt and cook pasta according to directions. For this recipe I used 1/2 pound pasta. Drain away water, set aside
Over medium heat add olive oil, zucchini, and thyme leaves cook for two minutes next add cheese and stir in spaghetti to evenly coat.
Sprinkle with a tad more cheese and serve warm or cold.

it is a great dish, I make this all the time as I was taught how to make this from mia Nonna! I switch out the veggies with whatever is in season!
