As an Italian, I fully approve of this recipe. If I may, being that we eat pasta almost every day, I would go for half the oil if I cooked it often.

I just prepared this dish, following the recipe exactly as written with the exception that I only had crushed San Marzano tomatoes rather than whole. This was so delicious! Thank you for sharing this great recipe.

In Napoli we make an even simpler version: no anchovies, and instead of parsley some very little oregano. Also you can experiment common variations with tomato puree and even with fresh tomatoes

My favourite pasta. I generally make enough sauce for three meals, it is so concentrated, so I have almost always one or two small boxes of frozen sauce to make a fast pasta. While the pasta is cooking, the sauce is thawing in the saucepan so I litterally have a delicious and easy dish ready in 10 minutes.

Wow! I subscribe to many cooking channels but this is the first one that really makes everything clear. Are you a chef? Your chopping skills are excellent, and your prep seems to be right on the money. Put together a Chinese Di San Xian and a cheats Mapo Dofu and I'm totally onboard!

I make this from time to time, but I add more garlic and anchovies and on slow heat so that the oil is thoroughly infused, only kalamata olives and a lot too, and then comes the chilli flakes. Those heat your mouth at first, but not that much. I use either dried chipotle or fresh habaneros ,de-seeded and a bit of the pith left. Parsley, more than that, but fresh tomatoes, the tins are good, but if you grow yours...as for the wine, that's your choice 😉

i always add fresh lemon juice at the end. toasted breadcrumbs are nice, too. and haters be damned, a light dusting of good parm or romano is nice, too :P and if you want to bulk it up a bit, add some nice olive oil packed tuna. that becomes more of a pasta al tonno

I make mine with roast chicken, peas and potatoes. Not the original recipe but, in keeping with the zeitgeist, if I call it putanesca it's putanesca. So there!

I just made this first time and I needed something quick!Also 🤞🏽hoping my Son would like it because the combination of ingredients were unusual to him but I recognized this would be a hit from eating at high end Italian restaurants in San Francisco CA! It was a hit because he went back for large portion for seconds. I did make some changes such as no anchovies, 1/2 portion of Capers & black canned olives; used crushed tomatoes because that’s what I had on hand making it almost too tomato’s taste so added small amount capers; I will next time use less VOO in the pan and I forgot dried parsley (it was all I had) PHEW! Sorry I just had to share that a 73 Native American Elder with my pantry anyone can thank you,Cecilia

Good question Mark! Traditional Puttanesca is made with black olives. Maybe because they have a richer, sweeter (more complex/ripe) taste than green olives which are more on the bitter-sour, salty and fresh side. Or because they were more readily available in the pantry in all seasons. If anyone has a more detailed answer, I'm curious too! 😊

They add an special, not instrusive flavor and "umami" taste to the dish, bit lets say if you never had Puttanesca and you make it without anchovies, you'd still end up with a super delicious pasta anyway. I also covered the point with anchovies a little on the blog. So if you don't like the taste of them on its own, you could just use as little as 1-2 anchovies and you probably won't recognize them as the "anchovie taste" in the pasta then. 😊

The dish looks great. You should get portable gas burner instead of electric. I noticed it takes a long time for the pan to come up to sizzling temp and most dishes can be cooked way better on gas burner.

Just switched to a gas burner a few days ago as I prefer cooking with gas. The main reason though was not the speed, induction is super fast, but more that my induction plate I used was crazy loud cause of fans. So the next video will be with a gas stove. Looking forward 😊

You haven’t used the newer electric ranges , they get hot really fast .I’ve used both gas and electric , there’s no difference.

Let say that anchovies+cappers+black olives+chili give a very salted final result and, considering the amount of garlic you showed, not an easy digestion, actually. As from the historic recipe (1930, probably from the island of Ischia) anchovies are an option. A good compromise could be to reduce (to half?) those ingredients except tomato/parsley. But, as always, "up to You"... Buon appetito

Anchovies and capers should always be properly desalted before use. Otherwise, the saltiness would be excessive.

Nothing needed actually, but nothing wrong to finish with some lovely parmesan. I would probably go for parmesan as it is less salty compared to pecorino and the Puttanesca normally has enough salt from capers, olives and anchovies.

Nicely done but buy a bench scraper, scrapping the edge of your knife against the cutting board will dull it. A bench scraper is a game changer.

Thank you! With all respect, I think the oil is a bit too much. It's better to saute the ingredients, not fry them. Of course, it's all a matter of taste.

What about some standing time to let the linguine soften the rest of the way? You took it out rather early, remember, and eating undercooked and very chewy linguine is not a pleasant experience.

Thanks for your question. It depends if you mean meat as a side dish ore adding it to the sauce. By adding it to the sauce its not an authentic Pasta Puttanesca anymore. But if you like to add some meat anyway, I think ground beef would work well, like making a bolognese-style sauce and cooking the sauce even longer.

If you never tried salsiccia sausage, you should totally start adding it to any pasta. It's kind of like ground pork but the taste, spiciness and sauciness is heavenly

@@flavorthoughts I ended up adding shrimp from Chef Jean-Pierre's recipe 🍝🦐. I wonder if anchovy's can be supplemented with Asian shrimp sauce, they both smell very similar and the colour is very similar

I’m sure it’s okay, but a good Puttanesca should be made with oven roasted tomatoes and a lot more Kalamata olives.
