Love how Giada says with authority, that this is how it's done in Rome. Then when she's in Rome, suddenly it's "Americans use bacon....In Italy, we..." . Fess up Giada, you'd still cook your "Cinnamon Carbonara" in Rome, and you only learned "the special tricks" of Carbonara while filming an actual Italian chef. Eva has the best line "That is a real touch of a real fake chef".

I've seen a young American in Rome very convinced that this way of putting everything togheter in a dish make it better and that italians are too conservative insisting whit old recipes... On the other hand many foreigners despite being in Italy for months or years are still convinced that in Italian restaurants and in Italian homes you can only eat pasta or pizza

I went to college with an Italian from Florence and he quickly schooled us on all the foods that WERE NOT Italian. He sincerely was disgusted that anyone puts chicken on pasta and that Alfredo is 100000% not Italian. This recipe is insane.

You, guys, are the best! One of my first attempts to make Carbonara, I used Fettuccine Pasta Fresca (as I thought fresh should be better). And it came out exactly as you said - very heavy, like a cement sticking together.

I decided to make carbonara spaghetti alla carbonara and managed to procure some guanciali and a nice hunk of real Parmigiano-Reggiano and I watched both of your channels repeatedly and finally made it tonight. It was amazing! Absolutely amazing. I could have used a little bit more water because towards the end of eating it it was a little bit drier than I think it should have been. But my goodness the flavor I opted for more egg yolks and and just not much white and halfway decent spaghetti. But you cannot make it without the guanciale. It can be reminiscent of spaghetti carbonara but the flavor from the meat just it cannot be replaced. You use that or it just can't be replaced. At any rate, I would even have served it to you people to see what you thought. Best one of the best pastas I've ever had much less ever made. So thanks all for the teaching that you do because some of us pay a lot of attention and rely on you. Ciao

I am so happy I found this. It's so funny! Vincenzo asking about parmesan cracked me up completely! OMG I just got to the walnuts and I can't stop laughing! Now I'm just a fat Canadian white guy, with an interest in food. I have no professional training whatsoever, beyond being the chip guy in my dad's old takeout place. I peeled the potatoes, chopped them into chips and did the first cook on them in the deep fryers. Eventually I was taught to cook the battered chicken wings/legs/half chickens and the fish. I made burgers and cooked them too...when dad was busy with other things I worked as his relief guy. I would say I'm an old fry cook at best, that eventually got into the IT industry, but I kept my love of food. I would NEVER do this....I will admit I have used cream in places I shouldn't have, not knowing any better at the time, but I would NEVER put walnuts in a carbonara.

I see that this is from one year ago - I’ve watched Vincenzo for a couple of years, and discovered Pasta Grammar about 6 months ago - as a viewer, I’ve often wondered who knows whom, and I absolutely love that two of my absolute favorites DO! So enjoyable to watch! But an FYI, if the rumors are true, I understand that Giada NEVER eats her own cooking, save for a bite or two for the camera, she’s concerned about her weight. @@KEYBEATZ even within the same region foods and cultures are different. My family is from used to be 1 region “Abruzzi e Molise”, in the 1960’s they split into two separate regions. My father’s side from what is now Molise. My mother’s side from what is now Abruzzo. But even within the same region my father’s and mother’s side are very different foods, even when food was the same they were prepared differently. My father’s family, on St Joseph’s day ate spaghetti with honey, raisins, walnuts, & pound cake. My mother’s family never heard of that. Even though they lived like 20 minutes apart.

I don't know if you still see comments when the video is over 2 years old but I'll take a chance. I originally found your channel from Chef Jean Pierre's channel. Then I found Pasta Grammar from Vincenzo's Plate. The cross pollination of your channels was a great stroke of luck because I have subbed to all of you and really enjoy your content. Thank you Vincenzo. I appreciate you and your fellow tubers Jean Pierre and his unseen sidekick Jack, Harper, and Eva. Keep up the wonderful food demos. 8:09 Interestingly, Giada is "turtling" when taking a bite of her supposedly divine carbonara. This is something people normally do when they feel vulnerable and instinctively bring up their shoulders to protect their throats. Perhaps she knew that carbonara purists would want to wring her neck for this unholy abomination.

Eh, she moves that way quite a bit, which is common for someone that petite as it can be tricky to get leverage when you're that short (and narrow) as an adult.

Eva defiyneeds a food network show. Her recipes work. They are delicious and authentic. I would watch. But I prefer to watch pasta grammar cause we love Eva and “Arpurr”. The combination is so charming.

Great fun video 😁🤌🏻👌🏻 Any Italian restaurant I go to first time, I order Carbonara, and soon as I get a cream sauce with bacon and parsley, that is the last time I go 😒 If more people know how to make carbonara, they would stop this destruction!!
