We had a huge family reunion yesterday in Central Texas. Smoked brisket and ribs, grilled corn on the cob, lemon mint coleslaw, caprese salad, and grilled/marinated eggplant. It was amazing!

When I lived in Sicily, I had a (wurst) hot dog panini with fries, provolone cheese and ketchup. Was never a fan of ketchup with hotdogs, but those were really tasty.

Add an egg to the dough and it will be softer and less chance it will break when you put in the hot dog.

If you want the dough to rise fairly quickly you need a little sugar to feed the yeast.

They are pretty sweet. It is true that most of our breads have sugar but I don’t know what is going on. Things seem to be getting sweeter and sweeter. It’s been out of hand but continues to get worse. I picked up some dinner rolls a few weeks ago and my kitchen smelled like I was baking cookies when I warmed them in the oven.

I keep wondering if bakers think we are all seriously depressed 😂 That used to a be a trick people used to put a little pep in your step before mass production. Add a spoon full of sugar to grits or bread. Now it’s a cup.

@@janetseidlitz5976 True. Even if you want to put the dough in the fridge for a day or two this can help with the rise when you take it out of the fridge. I used to do this thing where I'd sift over a couple of teaspoons of powdered sugar and do a light knead before the last rise and shaping. I got really good results. Not as nice as what Eva gets, but still really nice. I've been mostly making sourdough for so long now that I'm not sure I could even remember exactly how I did it, but it was something like that.

We have tavern that has been in business around 80 years, serves a "Barnyard Burger" (yum) beef patty, ham, bacon, egg and cheddar cheese! Eva is such a wonderfully talented chef...extremely delightful!

7:25 - At first I was like, "Wow, Eva even knows Pinocchio! She understands so much American culture!" Except Pinocchio is an Italian story. Disney made it famous here, but it _is_ an import. And don't feel bad about the hot dog bun breaking. Even the ones from the store do that sometimes. It is super annoying when it happens though.

That all looks delicious. But I never put ketchup on my hotdog unless I don't have chili. I put the mustard in the bun, then the meat, then dress it with chili, slaw and/or onions. Those homemade buns look so delicious. I also cook my hotdogs in the oven when I don't feel like messing with the grill. Works great.

I recommend using the instant yeast for bread machines. Even if you are making the dough by hand. Bread machine yeast has conditioners that help make a very soft bun. I make hamburger buns with it, and they are always so good.

Dude, I have been calling it wurstel since a was a little kid. For us italian sausage is salsiccia (the fresh one) while german style sausage is wurstel (the processed and packed one).

The carbonara burger looks good 👌🤤 our local snackbar actually has a burger just like it, only with a local bacon as well. (Friesian smoked bacon 👌) They also have a version with all the same toppings and fried onion rings, called lord of the rings burger and funnily enough they do use American cheese 😅 probably because it melts really well. I have to admit, sometimes I put it on my tosti (grilled cheese and ham sandwich) as well. 😋 I totally get the 'struggles' with finding something similar to graham crackers, when I want to try an American recipe that calls for them. They aren't available in stores here either. Apparently Europeans don't have a need for them. We'd rather have them with the chocolate on them allready. We call those prince cookies here 😁

when I cook hot dog sausages, I always cook them in a pot of water so they are properly cooked and then finish them off on the grill (or pan in the winter) so it's crispy.

to melt the cheese for the burger, add a small amount of water and replace the lid, like a tablespoon. It creates steam and it will melt the cheese in moments . hope that helps. food looks great

You can easily make ketchup at home and it will probably taste better than the store. Ketchup is basically just tomato paste, vinegar and sugar. You can add also celery salt, onion powder, garlic powder, mustard powder and cloves for seasoning but it’s not necessary. I agree with Eva, my experience is that store bought American food in European countries is most often not worth buying.

We will be grilling up Italian Hamburgers. We use my Nana's meatball mixture and make them into Hamburgers 🍔 😊 So it has egg, ground beef, ground pork, grated Pecorino Cheese, tomato sauce, basil, garlic, and salt. Served on sliced sour dough bread instead of a burger bun. Condiment vary by person. I like mayo, mustard, pickle, tomato, lettuce, and cheddar cheese.

I’m yelling at Harper all the way through this episode. Do you KNOW how amazing the beef and pork mixed would be? But you wanted bacon? Eva knows what she’s about. I’m glad it was so good, though! Our daughter’s Guatemalan mother in law and son in law will be here and making birria tacos. Our son is making the elote. So it won’t be an American Independence Day, but a delicious melting pot. And that’s fine with me. God bless America and all within its borders!

@@pjequinelady same for me. Former homeowners tried to hide old damage and the the new. Not just under the sink but all the cabinets to the left. Then the oven quit and the fridge/freezer died. 40,000 not including appliances. Major ouch. I would LOVE to show the new layout (demolition starts august 23.) good thing I’ve been saving for a 2 acre fence. If you can do your own tile backsplash it will save you a BUTTLOAD of money. If I didn’t have to replace my Tesla battery at the same time, I would have no worries.

I would love to see an episode where you go in to a grocery store and buy "very traditional"American ingredients, then taste test and compare with the American version. I am a hardcore mayo lover, now only Kewpie. Hated mustard (read that as French's yellow) when I was younger. There are now at least 20 different kind in my fridge--no French's.

You can toast using mayonnaise because it’s essentially oil. Make a grilled cheese with mayo as an oil.. Amazing.

If your ground beef doesn't have enough fat, you can always add shredded/crumbled cheese to the patty. I think a caper relish might have been fun on the burger.

A burger with a fried egg is the best! Personally, I just use mayo when I use an egg on a burger so the stronger flavors of other condiments don't drown out the egg flavor. Also, I feel that duck eggs are preferable to chicken eggs on a burger since they have larger yolks and a stronger flavor.... but that's just me. And I feel the cheese should be a moderately sharp cheddar to add a little bit of tanginess, but not too much.

Where I grew up we have pizza burgers...been around for awhile. ..it was the huge Italian influence 😉. There are 2 variations I had. 1) the original was a grilled hamburger, topped with a basic tomato sauce and lots of melted mozzarella...most Diners have these. 2) a mix of ground beef and sausage (removed from casing), normal seasoning, grill. Then top with basic tomato sauce, fresh basil and mozzarella..melt cheese. Both are a bit overloaded and sloppy 😂. Love the videos...all the foods I ate growing up 😊

As far as cooking a hotdog in a pan, I can help you out. My wife and I live in an apartment, and aren't allowed to grill. Instead, I cook hotdogs in a cast-iron skillet. Use a little bit of oil, either grapeseed or olive, or some butter. We use beef hotdogs, so the butter seems to work best. I typically cook them until I get a little bit of a crust going. Make sure to turn them periodically, and I can fit five or six in a ten inch skillet, though that depends on whether I'm using bun length dogs. Once you've got a good sear on all sides, it's good to go.
