An Italian Tries Food Across America | USA Road Trip - Part 3
I have a bad habit of torturing my Italian wife, Eva, with the worst of American food. To make it up to her, I'm taking her on a coast-to-coast road trip across the USA to sample the best (I hope) of American food.
If you haven't seen Part 1 or 2, check them out here: • An Italian Tries Food ...
In Part 3, we try a Philly cheese steak sandwich in Philadelphia, Pennsylvania; cannoli at Carlo's Bake Shop in Hoboken, New Jersey; and New York style pizza in the Bronx. Finally, we make a quick stop in Providence, Rhode Island for a "little" shopping spree in the Italian district of Federal Hill :)
What did we miss? Let us know in the comments below what dishes we should try next time.

You guys have created a monster. My daughter absolutely loves Eva, and now whenever I cook pasta - even if it's "authentic" (well, as authentic as it gets when a french guy is making it), she emulates Eva and her accent, saying "This is NOT Carbonara!" :P

Greg, as long as you cook it al dente and you don't put ketchup or strawberry jam on it, I think that any Italian would approve. Knowing it is maybe not our desired condiment but hey I have eaten decent pasta in some other countries in Europe that were not Italy. One time it happened in France... well near the border (I am from the north of Italy at about 100 Km from Briancon) but still we were in France!

When Italians left the home country, and came to America as immigrants they had to adapt their family recipes to what ever primary ingredients were available in America 100 yrs ago..for example, there was no buffalo mozzarella. They would have to make it from cows milk. That alone makes a huge difference in the taste of a pizza. Also, a food historian would take into consideration which regions of Italy did the immigrants come from, and the differences in the recipes coming from those different regions that may have carried the same name. Then, as restaurantiers, their customer base in America is not 100 percent Italian, they probably felt that they had to evolve their recipes to cater to the tastes of their customers...and voila...delicious American pizza
@nukalegend
@nukalegend 4 жыл бұрын
Adding on: when the massive immigration wave hit America, America was a massive trading hub of every country in the world making spices, herbs and seasonings to be very cheap. This allowed immigrants to experiment with these new things they couldn't get or afford in their home country.

I mean I'm pretty liberal of what I consider pizza, but even I think it's more of an pie than pizza. It's made shaped like pie, made like pie, and even the crust is more of an pie crust. Personally I consider it pizza pie, kind of like if you put pizza topping on bread and you could call it pizza bread. Anything that's made of *pizza* dough and is shaped like pizza, is an pizza. Chicago deep dish is not made from pizza dough and is not shaped like pizza.

Okay, I really love the videos you guys put out. As a native New Yorker And a professional chef Who has also spent a great time in Italy traveling the boot, And Dated a natural born Calabrian for years and became very close with her Family here in America I wholeheartedly feel that Ava did not get the right New York pizza experience. I will be the 1st to admit That after my 1st trip to Italy I could not eat Even New York style pizza for about 4 years after, When she says she wants pizza, I know what she means. There are places, it can be found.

I am from Sydney, Australia. I never understood the addition of parmesan cheese onto pizza. I think that piece of New York style pizza would have been good without the extra parmesan. Each to their own 🤷🏾‍♂️! I like Eva's facial expressions when reacting to the foods she tries!!! My predisposition on American food was mainly tasteless fast food because (depending on where you live) there is a "fast" approach to life. I had the same reaction when I tried authentic Mexican food, Soul food, Cajun and Creole cuisine, Pennsylvania Dutch, Blaxican cuisine in Colorado - to name a few. OMG, it's endless! Love your videos guys, keep it up. Xx.

About pizza NYS and NPS as in Naples style pizza. Here's the strong point and the weak point of each one. For New York style, it's made with shredded low moisture mozzarella with a high sodium and fat content. Thus you can actually reheat the pizza over and over again and still get longer cheese pull effect Napoletana pizza once cooked, it must be eaten fresh. The dough is made from tipo00 flour and fresh-cut and drained foir di latte or bufallo mozzarella. It should be cooked only once rolled or eaten fresh with a fork and knife after 30mins or reheat wrongly might turn into a total different product. So over the years Italian pizzaillo cultured Biga style pizza using pre fermentation and very high hydration and using something to protect the cheese from drying In the heat of the oven. With Biga pizza style you can reheat the next day and still be very good, and sometimes when we make extra pizza for tomorrow we pre-cook the dough with tomato sauce first then topped with Parmesan and mozzarella after half baked.

@dr.tomgio6694

@@TheMarlow85 Actually, the majority of southern Italians ARE Greeks! Even the word "Pizza", invented in Naples, is a local, dialectical word derived from the Greek word "Pita", which is a flat bread. Don't forget that Eva is from Napoli, if I understood correctly, which is an Italianized name for the Greek "Neapoleis" (New City). L'Italia meridionale is also referred to as "Magna Graecia" (Greater Greece). Don't allow political lines on a map fool you; Eva has the classic beauty of a Greek woman, just as does my wife from Puglia.

A pizza IS one thing!!!!! The simplest things have to be kept simple bc the simplicity and PERFECTION makes the dish. You can't replicate PERFECTION with additives that detract from the very perfection that's taken decades or centuries in some cases to improve upon!. Tradition! It is there because it is tested through time.
