Schupfnudeln are a popular gnocchi dish - and a great way to showcase homemade butter. Luisa makes the butter and Berta shows us two ways of serving these finger noodles - sweet and savoury - with lots of melted butter. This is the first of our episodes from the Sud Tirol in the Italian Alps.
Berta's schupfnudeln uses:
450g cold, boiled, floury potatoes
200g plain flour
1/2 teaspoon salt - some recipes add grated nutmeg
2 eggs
To serve:
50g unsalted butter, melted and a little golden but not browned
100g poppy seeds and 50g white sugar, blitzed together. You won't use all of it
or 3 tablespoons grated Parmigiano

This is fascinating, how language and culture mixes together where Italy, Austria, and Switzerland all border each other. Hearing Berta switch between German and Italian had me like 😮 and the nudeln preparation with the poppy seeds and sugar is very German.

My Austrian grandmother made these, but after they are boiled, they are rolled in toasted buttery bread crumbs, so good! Thank you for sharing!

My mom uses store bought dry pasta and if she has a lot of left overs she fries them in butter and bread crumbs (to be served with canned fruit (usually from a jar)).

In East Germany we usually fry them in a frying pan. They get crispy on the outside and smooth on the inside.

I think this with every video. I've just found this channel a couple of weeks ago and I'm currently going backwards watching all of the videos. I find myself praying for these lovely Grannies often. I'm glad I'm not the only one concerned about them. 😊

Buonasera to everybody. First, I'd like to thank all those who have extended their solidarity and prayers to Italy and our grannies through this channel. And a special thanks to Vicky, who during during this hard time for my country keeps posting brilliant videos about our beloved nonnas and their culinary skills. Apart from being enjoyable on their own, these videos are helping to spread a good image of Italy abroad at a time of national and international concern for the future of the Boot. Love from Tivoli and hugs to you all, as my family and I watch PG in our kitchen, on the second day of our self isolation, waiting for better days.

The even more traditional way to serve proper Schupfnudeln would be with Sauerkraut, but there are hundreds of variations in the southern Germany and Austria.

We fry then in butter till they lightly brown than a bit salt over it and Serve it with applesauce 😛😛

I don't know enough about the cooking of Trentino to know if cooks also fry their schupfnudeln - which sounds delicious - but as you both state there must be lots of variation, from valley to valley and household to household, best wishes, Vicky

@@pastagrannies in sudtirol and trentino we don't serve them with sauerkraut! breadcrumbs and butter, speck and butter are the standard! never seen poppy seeds with those, but it's pretty standard for other dishes (like with Germknödel, if you never taste those I suggest you to try to find them. absolute love. even canederli ripieni di albicocche!!)

I only know them with sugar, melted butter and poppy seeds (Mohnnudeln in German) or ground nuts (Nussnudeln). Typical dish of the Austrian/Bohemian cuisine.

I made butter from Jersey milk when I was a kid! Hand worked, all butterfat, hard as a rock under refrigeration! Thanks for posting this!

@@pastagrannies I understand the skipped generation... My mother is a terrible cook. Microwave everything. But her parents, aunts, and uncles were British, Irish, and Estonian craftsmen. Her foods are canned and bagged and convenient. That's not how she was raised. It's a shame how quickly tradition can or could be lost.

We have Schupfnudeln as well in Germany. Sometimes they are known as Spitzbuben. They are boiled and then fried in a frying pan.

it's because their culture is german (not the modern state but the word german originally stood for the german speaking culture area in central europe. it reaches from south tyrol to the baltic sea)

they were sppeaking both italian and a german dialect (Südtiroulerisch is rich of italian word and distant from standard german, I rimember some of my friends that were really bad in german at school, even if at home only spoke german. grammar rules and words are different)

I am so glad I found your channel :D it is really comforting to see all of these grannies making and cooking their traditional food, I'm absolutely loving the small things, like the wood stove and how the butter is smoothed out by hand in the mould, you can't get that anywhere else :D

Shlishkes! Always served with butter and breadcrumbs. We also made poppy seed, sugar and butter but with long flat noodles. The contemporary way is to serve this "sauce" with orange zest and powdered sugar.

My grandmother and mother used to make them with cinnamon and sugar. They woud make the dough, and my sister and would roll the Schupfnudeln and then they would be put in the pan with lots of butter and when being slightly golden they would be served with cinnamon and sugar. Delicious!

To all those, who claim these are not Pasta but Gnocchi (which is correct). Technically Schupfnudeln are little dumplings since they're made from a potato dumpling dough rather than a pasta dough. Hence Schupfnudeln are similar to "Gnocchi di patate", whereas "Gnocchi alla romana" are made from Semolina.

Ms. Vicky, the butter, the buttermilk, the pasta all looks delicious & most definitely best recipe of the week on you tube.( yes , you win again, lol) Years ago we made butter similarly with what is called a butter churn, is a wooden upright cylinder with a lid on top that has about a 1 inch hole in the lid with a wooden plunger handle / with a wooden disc under the lid attached to the handle, & you would pump/churn your dairy mixture up/down into a butter. Cylinder was appx. 3 ft. tall & 6-8 inches in diameter, & buttermilk is a huge product in rural Kentucky. Fave snack is crumbled corn bread & buttermilk in a tall glass, raw onion on the side, eaten with a spoon out of the glass. ( btw, i really like the cheese molder & design).

@@susanoconnor7299 a type of bacon, very similar to prosciutto, smoked/cured made in different countries in Europe, usually where they have the Alps. Some are made with more fat some with more meat but all very delicious. Much pricier then bacon though.

We have this finger noddles over here in germany schwabia and they are called bubenspitzle (a cute name for boys little penises). I love to make them for my children. Love all your videos. thank you so much for sharing.

this episode really exemplifies my favorite effect that geography has on spoken language: although they are in tirol, italy, the are still speaking a majority of austrian german, mostly anyway.

They don't speak German but an Alemannic dialect. In South Tyrol they study German only in high school (Lyceum). In this region a significant part of the population speaks Ladin, a neo-Latin language originated into the Rhetic people part of the Roman empire. The lady speak German and Italian.

It’s German I’m sure since my boyfriend comes from this specific area shown in the video and I am German. Ladin is spoken by around 10.000 people against 500.000 people living in South Tyrol.

Fabio Masetti its a mixture of both, but neither I (German) or my boyfriend (Born and raised in South Tyrol German as first language and Italian as second) understand them 100%. It’s a really unique language.

My grandmother made something similar which we call cheese knaydel. Instead of potato she used a dry kind of cottage cheese (sort of like ricotta). Azoy Geshmak! Sometimes served with butter and pepper or with full cream and sugar.

I love butter and eggs on toast. I discovered it for athletics. Or if you drink a lot of milk you will pack on a lot of muscle and improve your performance.

@@PhiLudo Now it is Italy as the Austrian Empire lost the first WW in 1918. Did you hear the two ladies presenting themselves in german? The younger one spoke some phrases in italian too, as they are citizen but the main language is German. I was also born in a territory which belonged to the Empire or to german nobilty since ten centuries before Italy annexed it and, after 25 years, became first nazi Germany and then Yugoslavija and then Croathia.

I thought those were German. We Germans love Schupfnudeln. I’ve only made them myself once but they were really delicious.

Schupfnudeln are a typical german dish. Also called Spätzle. Its delicious!

So far as I know, they are all fine. Families are very protective of their nonne. In terms of our Pasta Grannies - as we film only those who still like to cook, it also means they are in good health. Meanwhile, we're hoping Italy's extreme measures have the desired effect. 😊🌺 best wishes, Vicky

Ma grand-mère, originaire du nord ouest de l'italie fait ces pâtes, appelées "Raviouletous" (il n'y a pas vraiment d'orthographe officielle !). Elle m'a appris à les faire mais elles ne seront jamais aussi bonnes que les siennes !!
