I let out the biggest sigh when the plated tortelloni appeared…so beautiful! The pasta matches these two lovely sisters…so beautiful! They are amazing to be so spry (and funny) at 92 and 94. Blessings! TFS, Sharon 🤗♥️🍝

I love these sisters! The nutmeg is not something I would have thought of and with the spinach ricotta it must make for a delight!The ladies dialed it up which the pancetta and the traditional balsamic vinegar. So much to love in this video. I sure know that look from the dog. Fortunately for my two I tend to drop things. Beautiful! Thank you for another glorious episode!

Jedesmal, wenn ich die ehrwürdigen Damen sehe, die in ihrem Alter, diesen Teig lange kneten und vorallem mit dem Nudelholz noch viel länger ausrollen, habe ich den höchsten Respekt!!!! I am not wealthy but I can cook. What I'd give to try some of that 25 year old balsamic at the end. I imagine someday I could meet warm grannies like these and their skillful recipes. I miss my late grandma.

I as an Italian, have to say, one must keep in mind that what is used in this video is really the original, authentic “Aceto Balsamico”. The one that for a small, very small bottle, you pay a lot of money for ! It is basically a syrup, it is a kind of cream. Perhaps calling it "Aceto” (vinegar) would not be very appropriate. Sometimes they also use to put a few drops on a piece of Parmigiano Reggiano or on top of a dessert or as we see in this case, on a special plate. Let's say that the really, the original, the authentic, it's something really very very special, something that just a few drops are enough !

I have been fortunate enough to try 100 year old authentic Aceto Balsamico and it takes your senses to Heaven! I use a much younger one (15 years) in many of my cooking dishes, including Tater Tot casserole, along with the Worcestershire sauce. It adds the most wonderful and unidentifiable flavor.

Make sure you get a VERY good one. In the video they used a 25 year old aceto balsamico, that is pretty much liquid gold and goes for 129,- Euros (= 140 USD) per 100 ml bottle here in Germany. It's probably cheaper directly in the region and they had the balsamic vinegar boss there providing it for free I assume, but even in Italy that's an absolute treat.

⁠@@verybighomer Obviously, Aceto Balsamico bought at the place of production you pay much less than you pay especially abroad, but in general in stores. The same goes for Parmigiano Reggiano, for example. If I buy a piece of Parmigiano Reggiano in the air of production somewhere in Emilia-Romagna (as has happened to me many times, coming back from Italy after vacation, here in Germany, where I also live) it costs much less than I pay for it, for example, in a supermarket here in Germany or from someone in New York. However, true, authentic Aceto Balsamico (then of course it also depends on the years of maturation) is truly considered as liquid gold !

I interviewed a producer of aceto balsamico tradizionale a few years ago, and he said tasting these vinegars is an act of meditation. best wishes, Vicky

hi Lisa, I always taste the end result, though sometimes I think it makes more sense for one of the protagonists to be on film. I think if you have a bottle of the real thing - traditional balsamic vinegar - which is savoury, syrupy and tangy, then this dish is a good way of using it as it rounds out the umami of the pancetta and the gently spicy creamy chlorophyll of the filling. Don't feel tempted to add your everyday balsamic vinegar which is made in an entirely different way with caramel and sugar added. These tortelloni are also delicious served just with the fried pancetta! best wishes, Vicky
