Th reason Tortoises attack the color black and sometimes even brown. Is because darker shades triggers their fight or flight instinct. The reason for this is because well the things that hunt them are mostly Black in color. So they associate darker tones as potential threats and attack or retreat into their shell. Their primary predators are Crows, Ravens, Hawks, Rat Snakes, Indigo Snakes, Coyotes, and Foxes. Secondly the reason Tortoises attack darker colors is because unlike Turtles, who lay their eggs then leave for the ocean. Tortoises lay their eggs and then sit on them like birds to hatch and protect them. The biggest danger to their eggs, you guessed it are animals that happen to be dark or black in color. Mainly Indigo Snakes, Rat Snakes, and Skunks. Thirdly Tortoises typically live in the woods and they have pretty good color sight. So to them even their predators that aren't black. Appear to be dark shadowy figures then they get attacked. So it is in their nature to become defensive/offensive when faced with something "tall" and dark. That's why they don't attack black tape that is laying on the ground.
