Hi Shalom, here is the recipe 225g icing sugar and 225g caster sugar and 225g ground almonds. Mix these together and add enough whole egg or egg yolk to make a firm paste. Don’t over knead as that will release the oils in the almonds. Wrap immediately to prevent crusting. It can be kept for several weeks. This is enough to cover the top and sides of a 20cm (8in ) cake. Hope this is useful.
