Quick question: how do you make clay bottles? Just pick up the game and got up to bronze equipment but kind of struck here.

mine clay, make wet clay from crafting using water, should able to unlock clay bottle.

Is the QTE serve a purpose when harvesting? Why not just hold E?

I think it does more damage when you get critical strikes, better for resources that take some hits to harvest, the smaller resources there's no point cause some are done in like 2 hits.

3rd strike critical spots produces a consonance effect that one hit wood/mineral deposits. This count is accumulative and does work on another piece of resouces to break. Since copper and above might took a few more hits, especially when you're male, you can use the third critical hit to one shot another piece of mineral that you have yet to start breaking, so that you can save durability while earning back a sliver of spirit.
