I love when you are cooking with your sons. I cook with my girls and when they hum or make noise eating it is so satisfying. I feel like I'm setting them up for later.

Of course, cooking times will need to be adjusted according to the size you're going for. For instance, if you pound a breast into a thin steak, bread it, you can cook it in maybe 1 tbsp oil and 1 tbsp butter or 2 tbsp margarine in a non stick pan. I'd add another tbsp of oil for cast iron. Personally I like coconut oil. Oil helps keep the butter from burning, especially beyond medium heat(I usually cook meat at medium high). Anyways, about 4 to 6 minutes a side in a saute pan works great without having a gallon of oil sitting around that's going to go rancid once cooked with.... I really don't understand home deep frying. I really suggest avoiding such foods, pan fried is so much better, especially with the real butter adding so much flavor! It's not great for whole pieces. But it's great for 'patties' or nuggets. You can also oven bake or air fry breaded chicken. I really don't like most deep fried food because it's just too greasy unless it's cooked to perfection, even then it's still pretty greasy. Plus most use cheaper blander oils. I love the flavor of coconut and sesame seed oils, in particular. Forget about canola and olive or soy. Go lubricate a machine or something. Bleh. There are some good olive oils, but most are just bland fat. This is important. Fat shouldn't just be a lubricate but part of the flavor in your dish.
