To add to the olive oil symbolism: When we treat each other with mercy, we make allowances for the tendency of mankind to fall, often over and over again. If society becomes too rigid, the gears of our efforts seize and we all fall apart. How do we lubricate the gears to keep that from happening? Mercy. Oil. The lubricant of the life.

In our morning and evening prayer (Church of England Anglican) finishes each section of prayer with: Lord, in your mercy, hear our prayers. Evolved from Kyrie Eleison, it’s a beautiful prayer and as you say a personal prayer.

The connection to olive oil is understandable as I believe that it is olive oil, a tree that is plentiful in Italy, Greece and Israel, that is the source for the anointing oil used by the church in various rites, and may be the oil referred to in the Bible so many times. It was used at the hearth for cooking and making bread, and if blessed by a priest or otherwise used as an offering, was also used at the altar.

Seigneur Jésus Christ, Fils de Dieu, aie pitié de nous malgré nos péchés. Keep your eyes on the Lord, brothers. The temptations are all around as the periphery is brought to the center. Let's stay in prayer together.

Would it be fair to say that for modern English speakers (specifically "low church" protestants) that it is equivalent to how they use "grace." i.e. by saying "The Lord has been gracious to me" or "Save me in your grace, O Lord"

Perhaps you could help me with something. As I’m studying Orthodoxy, I see the patristic teaching for baptism. But then I see the “on the ground” reality of it in the Orthodox Church and it becomes very confusing and frankly, unsettling. There are many videos of infant baptisms where the priest is aggressively dunking babies into baptismal fonts. Some go head first, some swing the baby aggressively, some fully immerse, and some dunk the head and then the feet and alternate. Why is this? Why the aggression with infants? Why would this not be done delicately and with tenderness? This could easily prove to be my greatest Hang-up with the eastern traditions. I watch some of these and it seriously looks evil the way they handle these precious children.

The absolute best thing you can do is get to an Orthodox Church, and ask this question (and others!) of the priest there. He's the one that actually does the baptisms and will absolutely be the one to ask about baptisms. Even show him the clips. Be open and honest, chat and ask any follow up questions. The internet is a good place for discovering Orthodoxy exists, but it's a religion that is lived, and this is definitely a question to take offline! All I can promise in advance is that for Orthodox Christians: baptising a baby is the most loving, tender, gentle, beautiful thing we can do for them.
