Like you said Ms. Paula, never give up on the recipe, keep trying until you get it the way it’s supposed to be. That what my wife always did. I always enjoyed her first time try’s that goofed. They were still delicious 😋

My favorite quick fudge is 2 Cups chocolate chips ( or any flavor you like) , dash salt , 1 can condensed milk (NOT evaporated) and microwave 1 to 1 1/2 minutes until melted. Stir in 1 tsp vanilla and pour into greased or foil lined 8 in square pan and put in fridge. Truly No Fail!!

Paula dont forget the weather can keep a good batch of fudge from being what its supposed to be!! Its raining all over & rain is the enemy to making goood fudge!

I live in FL where our weather is so unpredictable, when I tried a recipe similar it didn’t set and it might even be that I didn’t have the fudge hot enough or I added too much milk, fudge is a commitment for sure 😝 ❤

This recipe is very similar to the recipe I do only I start with 3 cups of milk or semi chocolate chips, 2 Tbsp. butter or margarine, dash salt, 1 can sweetened condensed milk (in place of your sugar and evaporated canned milk), stir til melted smooth, add 1 tsp vanilla, take off heat and add 1 cup mini marshmallows and 1 c chopped nuts. No need to melt marshmallows as this makes rocky road fudge. I have made it many times for years over the holidays for gifts and it never fails me, as you say, keep stirring and use med. heat. I make it by stirring in colored marshmallows and quickly pouring into your pan. We called it Rocky roads...so freaking good

Besides constant stirring (or lack of) being an issue, perhaps it was left on the heat too high for, too long?😘

I think the recipe said "cook" until melted instead of "stir" until melted. She likely kept it on the heat too long.

Waiting too long between adding each ingredient can also effect the outcome. Chances are the recipe took her longer than 5 minutes. And yes, the constant stirring would be a big factor. I've had chocolate freeze up before into one big ball. You have to add a bit of liquid to get smooth out. Being on the heat too long without stirring can result in a hard ball but it can be fixed with a little patience. Pecans or walnuts are great in this fudge!😋

It took me more than five minutes to get the milk, butter and sugar to 234f, Idk if it's my location or because I have an electric stove. It turned out really good, best chocolate fudge I ever made.

I wonder about the heat level Ann used. That can make a big difference if the heat is too high. I prefer a hard fudge though. Do you have a recipe for that type?

I've often come across a recipe that was great 👍, but didn't turn out the second time 🤣. It's all about the temperature and ratio of ingredients you add at a time. 😋

Paula doubled the butter. Just Google and use the original Carnations Milk can recipe. It is fail proof and delicious.

This is not Paula's recipe. It came straight from the can of carnation milk decades ago. The only difference is Paula added 2 EXTRA tablespoons of butter and that is the mistake. Her fudge was too soft even after letting it set because of her doubling the butter. And note Paula's recipe does not even mention letting the fudge set at all. So of course that leads to failure Just use the original Carnation milk recipe fudge. It is fail proof. Just Google it.

When i was 12 years old, back in 1959, i made fudge from a Hershey recipe i believe, that was just sugar, evaporated milk,cocoa, butter, vanilla. NO MARSHMALLOWS, OR CORN SYRUP! It was boiled to softball stage. Then beat it until cooled and thick. Where is that recipe today?

The ingredients heat up faster in a skillet than a pot. You can have more consistent heat in the wider surface. Maybe that's how she was able to cook it in 5 minutes. The cast iron skillet will maintain the heat and each ingredient was able to melt or dissolve quickly as they were added. Makes you wonder if the recipe signified what cooking vessel to use.🤔

Too soft because she added 2 extra tablespoons of butter from the original Carnation milk recipe. And her recipe NEVER mentions letting the fudge set for a few hours. Just Google the original recipe from Carnation milk can. It is delicious and fir and quick..

When I make my Aunt Linnie’s fudge, the sugar, milk and butter have to cook on their own, and boil for 5 minutes, more large marshmallows

If you're using the wrong butter that can be the culprit. Paula's recipe on the website just says butter but is it salted or unsalted? The margarine vegetable oil spreads won't work so well with fudge.

Only use name-brand, quality milk-chocolate chocolate chips. Off-brands or store brands are not as good of a quality chocolate and will not melt like you need it to.

It is probably boiling it too long and the chocolate is changing forms. It is like when making No Bake Oatmeal Cookies, You need to boil that recipe for 1 Full Minute! Not a moment longer. Otherwise the cookies could turn out too dry and crumbly.

The quickest fudge is 2 ingredients 1 jar of 12 oz of peanut butter and a can of vanilla frosting heat both in the microwave and mix together in a large bowl and put in fridge for about 1 hour makes great creamy fudge

Paula used the original carnation milk recipe on the back of their can and claimed it as her own. The mistake Paula did was doubling the amount of butter. That makes it to soft. Also her recipe does not even say at all to let the fudge set up for 2 hours. Google and use the original Carnations milk recipe. It is foolproof and delicious and 5 minutes.
