I just made this! No lie, this is hands down the BEST rice pudding I’ve ever eaten. My mom in law loves rice pudding more than her children and she said this is the best she’s eaten, as well. She’s 85. Thank you so much for this!

Thanks, always enjoy Rice Pudding so glad for this recipe. Before you add the egg yokes how long should you wait after taking it off the stove to slowly add it to the eggs? Wouldn't want to ruin it after all the time to cook on the stove. Like the addition of the 2 egg yokes and also the butter. I haven't seen this on any other recipes I followed in the past. Like the old saying goes, you should learn something new everyday. I always struggled separating eggs using the 2 half shells. I once saw on a video, an easier way for me, to put the whole egg in a small bowl and put a tablespoon in an just scoop out to yoke. Thought I would mention this, if it could help others. Thanks for all of the recipes you share and your calm and reassuring delivery method.

Thank you so much for these nice comments. I love learning new things every day too! As for adding the egg yolks, you can temper them in immediately after taking it off the heat. The only reason I turn it off while tempering is so the pudding doesn’t burn while separating the eggs :)

I've tried a number of rice pudding recipes over the years and this is the best. I've made it with arborio rice using these ingredients and ratios except without the egg yokes and it is better with them. The only think I do a bit differently is microwave the milk to speed up the time on the cook top. Thanks for the recipe.

WOW! This was a cinch to make and the taste, flavor, and creaminess is out of this world dee-licious! The written directions advise to cover with a lid when reducing the heat and simmering for 20-25 minutes whereas in the video it cooked uncovered. I decided to cover and let it cook undisturbed like regular rice and it cooked perfectly without scorching. Finally with the egg yolk addition, butter and vanilla I was happily rewarded with the best rice pudding ever, thanks so much for sharing this gift 🎉❤😊

this comes at a perfect time! i haven't had rice pudding in years, and for some reason it caught my eye at the store on the weekend.... but the price and bad ingredients weren't worth it for me. This recipe is foolproof and I have made it four times since this video, so I know. The type of rice is key. Do not use long grain. That said, the ARBORIO rice I bought was very expensive (it came with a fancy brand name in a clear plastic container) so I looked for a similar looking rice in a bag. Bingo...for 1/3 the price i found "medium grain" ( which looked almost exactly like the Arborio) in a bag and worked just as well.

You can for sure. I recommend using half of the sugar in the recipe to whip into the egg whites to stiff peaks. Then fold them in while the pudding is still very hot so they can cook. This will lighten your pudding and make it more fluffy :)

I said I was going to try this and I made it last night. My husband, son and very finicky 13 year old grandson gobbled up half the double batch before it could cool and then took some home. Egg yolks are not recommended for this pudding as it turns it into a yellowish colour, still tastes very good, but I like my rice pudding white, snow white. Thanks for posting.

Cover only to bring it to a boil, then the cover comes off. It will definitely thicken.

Well I just double checked and that's not what it says. I did however just keep cooking and stirring and I cooked a little more rice separately and added it. I also threw a cinnamon sticks in while cooking which flavored the rice nicely. So it was a success! However, here's the instructions from the written recipe on your site In a medium sized heavy bottomed pot, combine milk, water, rice and salt. Bring to a boil on medium high heat, stirring frequently to avoid burning. When mixture comes to a boil, reduce heat and cook, covered, for 20-25 minutes or until rice feels mushy when squeezed between fingers
