Ingredients:
#Coriander seeds - 2 tbspns
#Cloves - 5
Black #cardamom - 1
#Cinnamon stick - 1 inch
#Pepper - 1 spn
#Cumin - 1 spn
#Sonf - 1 spn
#Bayleaf - 1
#Byadgadi red chillies - 2
#Turmeric powder - 1/4th spn
#Aamchur powder - 1/2 spn
Big #potatoes - 2
Chopped #carrot - 1
#Cauliflower florets - 1 cup
Green #peas - 1/2 cup
#Water - 2 cups
#Butter - 4 1/2 spns
Chopped #onion - 1
#Capsicum - 1 cup
Fresh #ginger and #garlic paste - 1 spn
Chopped #tomatoes - 2(medium size)
#Salt - 1 and 1/2 spn
#Kashmiri chilli powder - 1 tbspn
Crushed #kasurimethi - 1spn
Chopped #coriander - 2 spns
#Lemon juice - 1 spn
#Chilli powder - 1/4th spn
Chopped #coriander leaves
#Pav bread
Procedure:
** Pav Bhaji Masala **
1) Into a medium hot pan take Coriander seeds-2 tbspns, Cloves-5, Black cardamom-1, Cinnamon stick-1 inch, Pepper -1 spn, Cumin-1 spn, Sonf-1 spn, Bay leaf-1, Byadgadi red chillies-2 and fry on low flame. When color changes, remove from heat and cool down. Transfer to mixi jar.
2) Add Turmeric powder-1/4th spn and Aam chur powder-1/2 spn to the mixture and grind it smooth powder. Pav bhaji masala is ready.
** Bhaji **
1) Take a cooker and add Big potatoes-2, Chopped carrot-1, Cauli flower florets-1 cup, Green peas-1/2 cup and Water-1 cup. Pressure cook for 2 whistles and then mash well.
2) Take a medium hot pan and add Butter-2 spns and wait till it melts and then add chopped onion-1. Fry for 1 min and add Capsicum-1 cup, fresh ginger and garlic paste-1 spn. Fry till raw smell goes off. Add chopped tomatoes-2(medium size), Salt- 1 spn and cover and cook till tomatoes become soft. Give a mix.
3) Mash well the cooked potato mixture. Add Kashmiri chilli powder-1 tbspn, Salt-1/2 spn, prepared masala powder-2 spns, crushed kasuri methi-1spn, Butter-1 spn, chopped coriander-2 spns, Lemon juice-1 spn. Mix well. Add Water-1 cup and mash with masher. Cook till right consistency and adjust the salt. Cover and cook for 5 mins on low flame.
** Pav Bread **
1) Into a medium hot pan add Butter-1/2 spn and fry till it melts. Add Chilli powder-1/4th spn, Pav bhaji masala-1/4th spn and chopped coriander leaves. Fry for 1 min.
2) Take Pav bread and slit with knife and toast for 1 min in the butter and on the other side of pav apply butter-1 spn. Turn other side and roast for 1 min. Serve with lemon,onions and butter.
Tips:
- Pressure cook vegetables for at least 2-3 whistles. Veg should fully cooked for better mashy texture.
- Some people do not use cauliflowers but using cauliflower will give nice taste.
- For giving red color naturally I used Bydgadi chillies and kasmiri chilli powder. If you want you can add red food color too.
- Adjust the consistency by adding more water.
- Serve hot with buns. Enjoy Pav Bhaji with chopped onions and lemons
