COLD PEACHES AND AMARETTI CAKE - Delicious and beautiful, this cake is an original and tasty dessert perfect for all occasions.
★ INGREDIENTS
(doses for 8 people)
FOR THE BASE
100 g dry biscuits
150g macaroons
125g butter
For the filling
300 g sweetened vegetable cream
250 g peach yoghurt
200 g spreadable cheese
8 g gelatin sheets
2 peaches
FOR DECORATION
sliced peaches to taste
macaroons to taste
mint to taste
★ PREPARATION
How to make the cold peach and amaretti cake.
Let's prepare the base of our cold peach and amaretti cake. Chop the amaretti in a blender and put them in a bowl.
We chop the biscuits and add those to the bowl as well.
Add the melted butter and mix to obtain a sandy and homogeneous mixture.
Pour the biscuit mixture onto the bottom of a 22cm diameter springform pan, lined with parchment paper, then compact and level it.
Put it in the fridge to solidify for about 10 minutes and in the meantime prepare the cream.
We whip the cream in a bowl using electric whisks.
We combine the yogurt and the spreadable cheese and continue to blend to mix the three ingredients.
Cut two peaches into pieces and add them to the cream with a spatula.
In a bowl of cold water, soak the gelatin.
When it has softened, squeeze it and let it melt in a saucepan with two teaspoons of water.
Add it to the cream and mix quickly to distribute it evenly.
Let's take the base and pour the cream over it, leveling it. Let it rest in the refrigerator for at least 4 hours.
When serving, decorate it as desired with slices of peaches, amaretti biscuits and a few mint leaves.
We bring to the table, cut into slices and serve!
