Oh Catherine, My husband LOVES peanut brittle. He gets so disappointed only finding it during the Christmas season. I made this yesterday and my husband said it was much better than store bought {which usually is}. He's so happy that he can have it all year long. Thanks for this and ALL your wonderful recipes.

This looks so yummy! 😋 And you had an ace helper in the kitchen! 🤗 Our family always had fudge and divinity at Christmas. And our mother would also make little coconut balls covered in chocolate. They had coconut, cherries and pecans ground up, rolled into balls and covered in melted chocolate. So good. 😁 My mother and I went to a microwave cooking class many years ago. And one of the things they taught us was making brittle in the microwave. So one year I made all kinds of brittle for the family. One of my favorites was the cashew brittle. It was so good! ☺️ Then I put it in the little Christmas containers to give away. It was so much fun to make and it made a great gift. 💝 Last year I made peppermint bark. I have a friend who is now part of the family and she loves it. And she was so excited to get some, especially homemade. 😉 Another one I used to make with my mom was date nut candy. We also converted the recipe, that was my great grandmother's, to make it in the microwave. 🤗 Then my sister and I would make skillet cookies with dates and Rice Crispies! That was another great one and it cooked in a skillet. And even though the recipe calls it cookies, it's really candy. 😊 Gosh, I didn't realize just how many different candies we made through the years. 😳 Well it's pouring down rain today and a lot of these recipes don't work in high humidity. Plus it's way too early to start making Christmas candy because I would surely have it all eaten before Christmas. 😋 But that gives me time to think of some other Christmas candy that we've made since my childhood. 😁💕 Thanks for sharing another great recipe and for taking me down memory lane! 🥰

I've been making this for decades now. My recipe (from a very old cookbook) uses raw peanuts, and I mix the vanilla and baking soda together and add that mixture at the very end. Also, if you butter the bottom of the spatula, it is easier to spread. Also, keeping the cookie sheet in a warm oven until you need it helps too.
@starrhart5790 Жыл бұрын
Great tips. My Mother always used raw peanuts also. I’m just scrolling UTube looking for a familiar recipe. The warm pan is brilliant
