I added a few tablespoons of coconut flour to hold back on amounbt of sugar. Worked like a dream. Good recipe, thanks.

Baking was probably the first "instructional" use of the internet for me, back a hundred years ago. I went through at least 30 sites, but Joy of Baking was always may first, and last choice. The recipes are laid out so perfectly, but I really like how some of the older recipes (eg yellow and white cake) are authentic to their origin. Stephanie is fantastic...the best, and perhaps the most educated baker on any media. I blow-away all my guy friends when i show up with these babies, while at the same time, make their wives hate their husbands just a little more. They are that good.

Just made them yesterday and they are REALLY good! They are almost like a peanut butter cup, my whole family loved them! Be sure to make them pretty small like shown in the video (or under estimate the amount of "dough" you will use for the ball because it's a very rich treat). Also, make double sure your sugar is lump free. If you have to, whisk or use a sifter to take any lumps out of the sugar or you're going to have some major issues incorporating the sugar into the peanut butter (sounds pretty obvious now but I wasn't thinking it through when I made mine and I had to use a blender to get out most of the lumps, was a major pain lol). Lastly, as Stephanie says, make sure to melt enough chocolate when you dip your balls. I was surprised how much chocolate the balls picked up when I was dipping them and I had to make quite a few trips to the microwave to melt more chocolate for all of them. I found putting the balls in the freezer overnight and then dipping them made things so much easier, since the warm chocolate will make the balls too soft (and they will start to break) if they aren't frozen enough. They are definitely worth the effort though, will make them again! :)

Hi Stephanie, have been a fan of yours for a long time. Thank you for the education you continue to do. This recipe was the first one of yours I tried. It and all the ones that followed were great successes at my household. I was upset today when Allrecipes posted a recipe for Buckeyes and you didn't get any credit. All the same ingredients, some different measurements, but exact down to the toothpicks. Just think they should have given you the credit.

Everyone loves buck eyes ! Been making these for many years, we use chocolate chips and a little bit of wax with chips, also used more butter than this recipe but I'm going try this recipe and cut back the butter! Good project for kids in the kitchen, so proud they helped and shared with friends, nice gift for neighbors, mailman . We would use jelly size Mason jars and take Xmas material a cut a round that was Inch and half larger circle and put over pop lid and put ring over material screw it down it's very cute ! I also use a bit of ribbon and tie around cap and make a bow! It's really adorable!

They will last about a month or two in the freezer. I always wrap them in foil and then place in a freezer bag.

Believe me it works. I have made some very successful peanut butter cups with the mixture. Just take cupcake paper cups, pour melted chocolate in the bottom, then round and flatten the peanut butter into the shape of a round wafer, making sure you leave a thin gap around the wafer when placed on the bottom layer of chocolate, then add more chocolate. Very easy, and very delicious.

The use of grams makes the recipe consistent every time you make it. I often use grams so I get the same results every time I make something. The cups/spoons can vary so much. This recipe looks delicious. I can't wait to try it. 😋

Just made these they are fabulous except I didn't have a lot of time so I pressed the dough in a wax paper lined brownie pan and melted bakers semi sweet chocolate and spread ontop then cut into small squares and used small baking cups for each piece IMG_0426.jpeg

I live in Ohio the Home of the Buckeyes,. The Buckeye candies are a big deal around here, especially during Football season! Only we always leave the end open so that it actually looks like a buckeye! That middle part makes great fast fudge too, just spread it in a bowel, then refregerate it untill the butter firms back up, then slice into squires! Not real fudge but not to shabby either, try it

I've made these for years! and chocolate chips work great! if the batters sticky its probably too warm! and you should pop it in the freezer for like 5 minuets before you add the sugar or just don't microwave as long.

Try using peanut butter powder instead of confectioners sugar! Coconut oil or "plant butter"/ margarine should work fine. Check the ingredients in the chocolate and peanut butter you use against their dietary needs!

My grandmother taught me how to make these when I was a girl. She used paraffin wax in the chocolate to make a harder shell. You used to be able to buy paraffin wax in a box at the grocery store but I have not seen it for decades. I use shortening now too.

Yes, they are rich and sweet, but that is what a peanut butter ball is. You could try tweaking the recipe using less sugar.

12/28/21.....Hi Joy, can you use butter instead of the white shortening you used ? APPROX, how many do you get out of a batch ? I just watched your Choc. P. B. Bars too...so many recipes online, but honest yours seem to be the best.....Youngest GD is wanting these....and says she will help....she is good rolling the balls....she just helped her Mom make several different kinds of candy......

I was going to say that. Room temp butter is fine. Get your hands in there and mix it up or if u have a stand mixer put the paddle on and let it do the work.

Freezing causes them to sweat and makes dipping the chocolate messy, you get a thicker more uneven shell and not as attractive.

If you leave the peanut butter and butter at room temperature you don’t need as much sugar (which I prefer). Can also replace some of the sugar with milk powder. Could use honey instead. Can also blend in crushed graham crackers.
