Similar to the one I've made (and love)! I think the only differences were: vinegar instead of citrus, no fish sauce, water instead of coconut milk. Must try that variation soon! 😋

When I tasted this, I realized it would make a pretty good peanut noodle sauce. So I added about %50 more coconut milk and lime juice, some sambal chili paste, did my basic veggie stir fry with mushrooms, onions, and peppers, with fish sauce and rice vinegar, and fresh ginger and garlic. Added the sauce to it, and some rice vermicelli. Finished with about 1/4 chopped cilantro, and some extra siracha. Very awesome. You're the man Chef John!

All-natural peanut butter is absolutely key. I tried multiple times with name brand peanut butter with all the emulsifiers like he mentioned and it just never ended up tasting right no matter how much I tried. So much better with natural peanut butter.

I know exactly what you mean, DPMixing! I made his Peanut Curry a few months ago and used regular peanut butter. It just didn't taste right, so a few weeks later, I tried it again using the all-natural and BINGO ... it was sublime.

@@PockASqueeno most grocery stores carry it. Just look at the ingredient list. It should only say “peanuts, salt”. Some are only peanuts, in which case you would have to add a little salt to this recipe.

I made this sauce with natural peanut butter. I ate it with spring rolls. It was so, so good. I did add lots more sugar and chili sauce and I did the old shake, shake with cayenne. I love this sauce.

this may be slightly out of place but... small suggestion: how about making fudge for a episode? I mean, we all remember standing outside the fudge shop on a cold winter day (or moderate spring day in my case) looking at the guy making chocolate fudge through the glass. little tip: add the chocolate after it's cooled down a bit to get more chocolate flavour. cooking chocolate too much takes flavour from it. and be careful boiling sugar. (you don't want to burn your hand!) hope you like the idea.

If you don't have the "fancy hippy peanut butter" you can always just throw some real peanuts, almonds, cashews, or a combination of them into a food processor and run in on high. After 2 minutes you will have your own additive free nut butter. It is WAY cheaper than buying it (especially almond butter).

I'm going to try your version next time I make peanut sauce! I usually use "chunky" because I like the extra crunch. I'm addicted to spring rolls and this might just push me into rehab if I'm not careful!

It works great as a marinade, mostly its used as a marinade for tofu. You can sub coconut milk with regular milk, or water. But coconut milk is delicious, you should give it a try.

Hi, I am butting in. Ready-made peanut sauces I've found here in France often don't contain any peanuts at all. That's one of the reasons I'm glad to see how to make it myself with "real" stuff and avoid the "mystery ingredients" in the bottle of ready-made -- but this could be a solution for you. I don't think almond butter would work but cashew butter might be interesting.

Basic peanut sauce for satay (sambel kacang): roasted peanuts grinded, add palm sugar, add grinded chilly and garlic, salt and peper; add sweet soy sauce. add water a bit to let it reach the desired consistency. add desired spices(family vary) Is chef john recipe authentic? no. Is chef john recipe taste good? yes. To be honest mate, adjust and resize as you see fit, becoz all you want in the end is delicious meal (by your/and your peer standards, not by authentic standards). The bottomline is HAVE FUN WITH YOUR MEAL

I don't know if anyone has answered you yet but a good alternative to fish sauce is miso paste. It's salty and savory like fish sauce. It is also vegan, if your're into that kind of thing.

We use a lot of fish sauce for cooking/dipping as well, and I can confirm that it just never goes bad. The worst it can do is evaporate a bit and form salt crystals around the edges, but it will still be perfectly fine. source: I'm Filipino

I've seen peanut sauce done many ways. Some with several ingredients and complex spice mixes. Some as simple as peanut butter, sriracha and rice vinegar. Either way its always a great dipping sauce. And to those with a nut allergy, can you eat sesame paste? If so it seems like it might work as a substitute.

Very nice! I usually use chunky peanut butter, to give the sauce a little texture. I like the trick of heating the coconut milk separately and then blending it in. My approach of heating the whole mixture results in peanut-butter bubbles which burst and make a mess. Unless the peanut butter is heated very gradually, it tends to separate, resulting in a grainy texture. Chef John's method avoids all that. I would recommend incorporating some freshly grated ginger root to taste. (The ginger root grates more easily if it's stored in the freezer.) If you can find palm sugar (jaggery), its flavor is more subtle than brown sugar. But these are just minor variations.

Chef John, could you also try to make a peanut sauce with freshly ground roasted peanuts instead of peanut butter? I made one, and for me it changed my whole look on peanut sauces, the flavour was incredible. Oh, and by the way, try to scatter caramelized chopped peauts, maybe even caramelized salty chopped peanuts over your sauce, you won't regret it.

Chef John, your know how my mom does her peanut sauce? She got some ground nuts, toasted it in a hot wok, and then pound it in a mortar (but if she's lazy she just use a food processor), add palm sugar, salt and sambal oelek and a little bit of water to suit your consistency. It's equally as awesome, try it! :D

Yes you can use either of those. I've used tahini (sesame butter) instead of peanut butter sometimes.

Hi! I'm not Chef John, but my wife is Vietnamese. Fish sauce does NOT go bad, and does NOT need to be refrigerated. We use so much that it doesn't stay around long enough to be a concern. Just think of it like ketchup or pickled ANYTHING. It doesn't go bad because of the salt and vinegar content. Worry more about the white bread in your cupboard.

I used always want to go to Thai restaurants and I’d exclusively order the sautéed chicken shish kabobs with peanut dipping sauce. They are usually appetizers but I’d just get two orders for my entree. Peanut sauce is amazing.
