My sister requested I make these for her birthday :) I have always called them pecan petites but they are basically bite sized pecan pies. I bake them every year for the holidays and they're a favorite among my family and friends. They are a bit time consuming but are well worth the effort! Come join me in the kitchen as I make this batch for her :)
Recipe
Crust:
6 oz. Cream Cheese
1 cup (2 sticks) of butter
2 cup flour
Filling:
1½ Cups Dark Brown Sugar
2 Eggs
2 tsp. Vanilla
1 cup Chopped Pecans
2 tbsps. Melted Margarine
1/4 tsp. Salt
Crust:
Mix softened butter and cream cheese. Mix in flour one cup at a time until dough forms.
Divide dough into balls (about an inch in size) and press into cups in a mini muffin tin.
Filling:
Mix filling ingredients until incorporated and fill in shells about 3/4 way full.
Bake at 350° for 30 minutes or until golden brown.
*Note I always make a double batch since I usually bake these for the holidays along with my Christmas cookies. You can cut this recipe in half to make 24 instead of 48.
