Love my koda 16 but I’m about to upgrade to the dome s1. I don’t make pizza professionally, but I love doing it so much that every weekend I make sure either the family are having pizza or we’re inviting people over or sometimes I’ll just make dough even to freeze it to use later. I just love the process so much.

another great video!! i love making pizza for everyone..i’ve got a fuego wood oven in my garden that i had to have lifted over my house and have been practicing making pizza for 3 years….i would love to pick your brain at some point about setting up…i’m going to use a similar set up to your 1st set up and purchase 2 roccbox ovens to get me started ..i was delivering cars near st albans last wednesday and i wanted to come to see you and try your pizza but it’s the big transporter that i drive that carries 11 cars and it’s not that easy to find a parking space 😂 hopefully i’ll be able to make the journey at some point…only problem is i live 3 hours away from st albans…keep up the good work.

I’m glad you know what happened to the old oven. I’m curious to see now that you are cleaning the thermocouple on the old oven now just how long it goes before it fails. I’d also be interested to know if Gozney finds anything else out about the oven when they get it back and tear it down. I’m glad you don’t have to worry about having to run a wood fire for another market though 😂

You can probably use a flex straw - and blow out the thermocouple - that works for me on vent less heaters that I have

First of all, to a foodie and passionate cook like me who daydreamers all the time of having my own little restaurant or food truck (but doesn't have the budget and courage to go for it) you are truly a hero and an inspiration. Now I do have a question for you. I know you have your food truck all set up for the Gozney Domes, and I assume you built it at a time when the Dome was Gozney's latest top of the line product. I also know that you mentioned before that you like the dual fuel in order to have a back up in case you forget to buy propane. But let's assume you were always on top of your propane levels and that you'd be in a position right now that you'd have to build your food truck... Do you think that the Gozney Arc XLs would be a viable alternative to the Domes for your business? They say that the Arc is more fuel efficient, and given that the flame outlet is much slimmer and to the side, the effective cooking surface is said to be comparable to that of the Dome. Or would that still be a no-go, for instance because with the Dome you're basically extending the chimneys and having it vent everything outside? Is that something that is bringing looked at by the officials when your truck is being checked for safety?

Finally they made it with fully removable stones so people can replace them with customized biscottos, since Gozney went cheap with their stones (such as Ooni). I never bought a Dome mostly for this very reason...now I'm waiting until they start making the customized biscottos at the Saputo Fornace in Italy and only then I'm gonna pull the trigger! I highly recommend using biscotto stones, for your business, and all your pizzas that ended up in the trashcan are gonna be just a bad memory ;)

I’m really not interested in swapping the stones. Baked 10s of thousands of pizza with no real issues. Also not many realise this but Biscotto works best at 40mm and Dome stones are 30mm.

Have you ever cooked on a biscotto? they usually come in two thickness (2cm and 3 cm), why would you ever need 4cm? in all your videos i see you struggling with moisture forming under your pizzas and you have to "dig under" with your peel before turning them in order to detach that slightly stuck dough in the middle...and at times you endup with wasting pizzas (and precious time) in the trash. With the biscotto you're not gonna have that problem. With a biscotto you can have the stone set at 500c and still the pizza won't burn or stick in the bottom. tbese cheap cordierite stones make more sense used in deck ovens for NY style pizzas, pan pizzas or anything cooked below 400c Neapolitan pizza needs more heat from the bottom that is released gently and doesn't create moisture. I upgraded my two koda 16 with biscotto stones for my popups (60 pizzas a day) as soon as it became available a while back and it made a hell of a difference! I also use two effeunos for indoor events and i would never ever think about cooking without biscotto stones! In England they say "once you go black, you never go back" 😂

Really not a lot of money commercial use. I’ve seen ovens cost 5x that amount last 1/2 the time. It can be fixed it’s just faster for me to replace.

I don't know if gozney makes one but there are others like blackstone making them. It would need to be installed and checked by a gas engineer for my use as it’s a safety device. Its best this goes back to Gozney as they also wanted to see what the internals look like after almost 3 years abuse.

Yeah. That’s it. When the ovens hot without flame so either get it hot on gas or a wood fire running on embers. Slide bread in, slap on the door and fill the steamer.

They really should have replacement parts, the lack of parts availability is quite frustrating considering the 5 years warranty doesnt cover everything after a certain point.

It’s a gas safety device that failed anyway. It’s not something that should be consumer replaced.

@@peddlingpizza Adam a thermocouple is a replaceable part on a gas appliance and even if it’s not they fill pilot assembly with the thermocouple should be available as a spare. Just because it’s a safely device doesn’t mean that it’s not replaceable, I understand you can’t say wrong against Gozney but your wrong and the spares should be available to anyone who can provide the appropriate ticket to show they can work on LPG. This is coming from someone who works in the industry!

Having something like a thermal coupling is nothing serious we go through 3 of them a year at work on various different pieces of gas equipment pretty standard for them to get worn out basically a consumable for something that is getting used so heavily it’s quite acceptable for it to be replaced every couple of years or longer

You can't just replace the thermocouple? I owned a pizzeria for 4 years and I would have to replace the thermocouples around every 6-12 months. (But that was on a regular deck oven)

Possibly but I would have to completely disassemble the oven. Easier to replace the unit and the other go back to HQ for investigation. Remember these are not commercial ovens and it technically has had over 12 years of domestic use.

@@peddlingpizza While I understand they are not commercial units, your earlier video said you had to replace the oven as you couldn't replace the gas thermocouple. They are a 10 pound part, and seems a bad design if you can't replace them as they are a common failure point even in domestic units.
