Another question I have is on 3:57 in the video and after adding all the spices powders, we cover it with the lid and chef, how long should we call the masala before adding the water? I recently cooked this batch of masala and felt the taste had a breakthrough. I am not exactly sure if I was brave enough to let the masala cooked in oil in a much longer time. A year ago I started my Indian cooking journey by watching some American Indian cooking video and was taught never cool ur spices too long. But this time, it really brought the flavor to another level. Thx.

I have also been a long time viewer of this channel and appreciate the details chef Asok puts into. This is my first time seeing soy source used in an Indian dish. I see that using dark soy source here is to enhance the color of the masala but is that the only reason? Is it common using soy source in Indian cooking? And it’s used occasionally, what other dishes would that be? Would love to see what others think about or their experiences are. Again another great video and thx.
