An idea for making the dough spreading easier/faster, find a shot glass that fits your muffin tin but leaves a gap and use it to press the dough around evenly. Could use a light coating of flour to keep it from sticking to the glass

Try using an egg to squish the dough into the cupcake pan, just do the egg in water first so the dough doesn't stick to it. Worked great for me.

I really like the fact that you don’t use odd or hard to find ingredients and don’t really include artificial sweeteners. In the early pandemic I came across Greg doucette and the various other channels that make high protein foods with lots of artificial ingredients. I like your approach to snack city.

@@lijeffli7 I don’t like the way they make things taste and tend to cause stomach issues for me. I have always dieted, for lack of a better term, any thing is ok in moderation. I don’t eat tons of sugar but some is ok. Personally I think people over rely on artificial sweeteners as a crutch

I'm not a sweet tooth myself and I don't like the taste of the artificial sweeteners, I'd rather have something non-sweet such as dark chocolate or with just a bit of sugar to my taste. But flavor in recipes is often something that has a lot of room to tune to your taste anyways. Mom never baked a cake from a recipe she didn't reduce the sugar by *at least* half without compensating for it with any sweetener, and even her average cakes are better than the best I've had anywhere else.

I do something a little different for pizza snacks that you might like. Crescent roll dough make your own or the store bought ones in the tube. You make mini crescent rolls filled with pizza toppings roll them up cut them in half and set on their sides to bake. Looks like a mini cinnamon roll from the top down but it's Pizza crescent bites!

Awesome, I make a similar snack but the base is zucchini. My husband is 6’4 with a high metabolism so he eats 6-7 times a day. Having readily available snacks that I feel good feeding him is important to me. I enjoy your content.

You could spray with non stick spray something cylindrical (wrap with cling wrap first) and press into the mounds it would go much easier

Ever tried to use a second muffin tin to press the dough into the form? Just some nonstick/oil to the backside and you should be good to go. Think out of laziness and knowing who i am i will just make mini pizzas that just fit into the airfryer and try to flashfreeze those, but thanks for the idea :D

1:55 My method for getting the amount of portions right when I prep many portions, works every time and at least for me I found is quicker and significantly less hassle than this method (but sounds more tedious) : 1. After the recipe is tuned by weight per portion I multiply it for the amount of portions I want, plus some extra to account for life. So in this case maybe I'd account for 50 portions for a 48 portion tray, maybe 52 depending on the recipe etc. 2. Zero the bowl with the stuff in it, and take out the correct weight per portion. For example in this case if I'm not mistaken the dough is 619g total for 48 portions, I would've rounded it up to make it easier so let's say 624g for 48 portions (but make 650g incl safety). Zeroing the bowl and taking out -13g each time. 3. Yes it's a bit slower per portion than measuring it blasé, but if you want the portions to be even then it's faster. 4. In the end due to life being life and the world existing in reality the usable extra in the bowl will be less than what you accounted for. Depending on what you're doing it will might make a "half" portion, a chef's treat, or something to divide evenly across the portions you have. With recipes where it's harder to know what the total weight will be (e.g. meats after they got cooked, legumes after they soaked) I account for wide tolerance in the recipe, and divide whatever total mass I end up with to the desired amount of portions while again allowing some extra. So it's basically the same but the total mass is only a good estimate ahead of time so the calculator comes out when it's time to portion.

Hi Josh. Got the Zwilling set (Canadian so no deal). This was my first addition to snack city! Feels great to have that instead of buying crap from the store. They are delicious! Next weekend It's chicken fries or taquitos. Haven't decided yet. Also the broccoli jalepeno bites sound good too! My wife and I have been buying these EXPENSIVE frozen snacks from Costco called Brazi-bites. They are these really good Brazilian cheese balls. They are delicious but have become really expensive. It's been our go to weekend lunch for a quick snack for a while and we're excited to start switching to yours.

Second does anyone else have issues with the bags not holding a seal? I haven't used all my bags yet but out of the ones I have used four of them leaked due to holes that I'm assuming were caused on my first use? IMPORTANT NOTE: Zwilling made this right and immediately shipped us four bags free of charge. They stand behind their product and I appreciate that, but I am curious if others are having issues with bag reliability or if I just got an unlucky batch? Thank you again! First off love tons of your recipes, lost 30lbs meal prepping them for a couple months! This recipe though I followed the metric measurements and got an extremely liquid dough, second batch only used 40g of eggs whites to get the right consistency, so I'm not sure what happened.
