There's a very talented cook on YT who has a recipe for cilantro lime rice. She puts Bay leaves in her rice, also lime zest and lime juice but she adds her zest when sauteing the rice and onions and like you adds the l.juice at the end. Was wondering why you add your zest at end as opposed to earlier in process.
