They actually do add green onions in Bánh mì in Vietnam. They just shred it, then soak in water to remove some of the onion flavor and to give the onion the curly look. Most places outside of Vietnam skip this (maybe that’s why Aaron doesn’t know it, but if he did, he would add it haha). I always add it even when I order from the Banh mi shop here.

3 Crab! I'm American and love cooking Asian foods. I bought my first bottle of fish sauce when I began experimenting with recipes. It was a huge bottle and the smell was off-putting, so I thought, what am I gonna do with all of that? Guess what? It's gone! I'm on bottle number two! I love using fish sauce!

Any fish sauces made from first drip batches such as 3 Crabs are good. They have higher fish umami content, more concentrated. The usual most sold fish sauces such as the Squid brand are the less concentrated 3rd+ drip batches. Still good tho. Just not premium stuff

I work at a vietnamese restaraunt, and your banh mi is surprisingly different to ours. If you added lemongrass to your pork (which we grill) , it would make a nice improvement in flavor I think. We also use a pate made of pork liver, which adds lots of umami to an otherwise bland mayo. Otherwise, good job on the pickled veggies and great idea to torch the pork!

I was lucky enough to be introduced to Vietnamese culture in 1987 have been eating bánh mì since then. I have only used/eaten chả lụa as the meat in the sandwich, not as an add on for thịt nướng or xíu mại. I call chả lụa Vietnamese bologna when people ask what it is. I like it but agree with you, it isn’t needed for authentic bánh mì.

You did a great job, Aaron! I am Vietnamese, usually, when we pick a place to eat Banh Mi, Pate and butter sauce are what we look for because 2 of them are the main factors to determine if Banh mi is delicious or not. Try to make pate and spread on your Banh Mi Aaron, it will be much tastier!

When I was in Vietnam for 3 weeks, I had at least one banh mi everyday, either for breakfast, tea, or supper. I like sandwiches, and these were so cheap and easy to get off the street everywhere. You don't get bored easily because you just keep changing what meat gets put into your next sandwich. The next thing I had a lot of was beef pho soup. Thankfully I don't drink coffee, otherwise I'd be broke in no time.

Can't speak for other people, but my family loves the smelll of nước mắm. It's used in a big chunk of Vietnamese cooking, and is a common dipping sauce for meat and veggies. The smell is very nostalgic to me and reminds me of mom's cooking. Good job on the sandwich, it looks yummy.

The Banh Mi is one of my all-time favourite sandwiches. I love that it's super customizable. As long as you have your pickled daikon and carrot, and some kind of meat (or even some marinated tofu), mayo, and Maggi sauce, you're good to go. It's been too long since I've had one. I think I'm gonna use this recipe to make one soon. Also, a I didn't know Maggi came in a bottle that big. That would last me like 5 years, lol.

Highly agree! Banh Mi is one of the best sandwiches in the world. I'll surely try your recipe, Aaron. Just from Claire's comment, I can see and hear how legit good this is. I just hope I can get Vietnamese baguettes here. Thanks for sharing this.

It looks so good, but I had to Google Rilletes: had no idea what it was! Maybe at some point you can show us how to make it? Thanks for this video, Aaron and Claire. ❤
