When we talk about gujarati kadhi then there are so many ways you can make it, each house has
their own recipe for gujarati kadhi, some makes it sweet and spicy, some people don't make it much sweeter, some people make it yellow by adding haldi powder, some people prefer white gujarati kadhi, gujarati kadhi has its own masala which made from curry leaves, cumin seeds, white ginger (Amba Harad), and some people add fresh toor dana also in this masala which makes it more tasty, to make kadhi sweeter you can add sugar or jaggery also.
Many people faces some problem while making gujarati kadhi and most common issue is its curdle. As a solution you just need to stir it continuously and flame should be always low. Adding right amount of besan gives it perfect binding. For 200 Grams of Curd you will need 2 tbsp of besan, many people add rice flour also to make kadhi more white but traditionally besan used in gujarati kadhi. In winter you can and fresh garlic also which makes this kadhi very very tasty. Another version of Gujarti Kadhi made with onion, this kadhi also taste best, there is one more version of gujarati kadhi which made using fresh fenugreek leaves.
You can serve this gujarati kadhi with Khichdi, swaminarayan khichdi, rajwadi khichdi or tawa khichdi or any types of khichdi, rice, pulao, veg pulao, green pulao.

200 Grams Curd
2 tbsp Gram Flour
1/2 Cup Water
1 tsp Ghee
1/4 tsp Mustard Seeds
1/4 tsp Cumin Seeds
2 Bay Leaf
1 Green Cardamom
1 Cinnamon Stick
3 Cloves
1/4 tsp Fenugreek Seeds
5-7 Curry Leaves
1/2 Cup Water
1 Ginger
3 tbsp Sugar
1 tsp Green Chilly Paste
1 tsp Kadhi Masala
Salt to Taste
