After some experimenting and a bit of tweaking, I've finally got down what I consider to be the PERFECT icing consistencies for achieving super sharp edges and straight sides! In this tutorial I show you exactly how I arrive to these GREAT consistencies. As the tutorial shows, I make 2 different "types" of icings:
1). soft icing = for crumb coating and filling
2). hard icing = for damming and the outer layer of icing
Following are the amounts of ingredients I USE to achieve my icing consistencies. Remember, you can change how hard or how soft YOU NEED your icing to be by controlling how much milk you add. It will of course depend on the weather, temp, and the climate you live in. This can also change throughout the year.
These amounts are for a FULL BATCH of icing (can be easily halved):
Soft Icing:
1 cup high fat ratio shortening (NOT veg. shortening)
1 cup butter
2 tbsp meringue powder
2 tsp clear vanilla extract
8 cups sifted confectioner's sugar
9 tbsp milk (regular or 2% work great)
Hard Icing:
2 cups high fat ratio shortening
2 tbsp meringue powder
2 tsp clear vanilla extract
8 cups sifted confectioner's sugar
10 tbsp milk (regular or 2% work great)
Tips:
*For best results, make icing right before you need to ice your cakes. That way, the consistency will be the same when you're icing your cake as when you "tested" it out. Using it fresh and right away has worked out GREAT for us!
*One full batch of soft is the perfect amount for filling and crumb coating a two tier cake consisting of 8" and 6" cake tiers.
*A double batch of hard icing is the perfect amount for damming and icing a two tier cake consisting of 8" and 6" cake tiers.
*Batches can be easily halved, doubled, even tripled. We've managed to fit and make to perfection a triple batch of icing in our 7 QT mixer.

Hi Laura and Arnie. I'm the owner of Azucar- Baked goods, just started my home baking business in 2020. You are one of the few bakers I follow and enjoy your videos/ Tutorials. I had to let you know the outcome for me of all of your efforts to provide everyone with this great tutorial for an outstanding butter cream recipie. I'm not a butter cream baker, my preference is the light fresh whip icing. On the insistent of one of my clients, I went on a a journey of finding the absolute best buttercream recipe to use. One that wasn't cloyingly sweet and actually allowed the taste of flavors to shine through! I looked at your tutorial a few times, and finally ran a test batch, following your instructions closely. I got to say it was delicious! For anyone who is following you and uses your recipe I offer this advice. Make it fresh as you use it for the best outcome. Ernie, you have a trained eye, it took me a bit to be able to say: ok, its at the right consistency, and not grainy. I used a combination of extract to obtain a unique flavor, and that worked well, so experiment with flavors. Last but not least, Do not let it sit, found this impacts on the buttercreams ability to maintain a smooth consistency. Your recipie is the only one I will use for the cranky clients who insist on butter cream, THANK YOU! keep it coming, wishing you much success.

I made them both yesterday for the first time finally after years of seeing this. The hard icing after I finished I thought was airy for a second it spreaded it was smooth no bubbles like in the video I was like omg this is amazing. I used a lot recipes tbh Edna's is the best and kudos to Laura and Arnie for adaptation to the hard icing. Now I finally tried it.

I have tried SO many different icing recipes looking for the perfect one. I have finally found it, thanks to you!! I've tweaked it a bit. added some different flavorings such as almond emulsion and alan tatreaux's (sp?) bridal blend. It is amazing! I can't believe such a simple recipe was the way to go. I didn't have to stand on my head for this one at all! I thank you two so much for your amazing turorials! You just don't realize what a God send you, and others like you, are to those of us just starting out! Thank you so much for sharing your gifts with the rest of us!!!

so.. with the second batch I didn't listen to you. I went and bought the expensive hi-ratio shortening. big mistake! It was greasy. Tasted great, but way greasy. I will definitely stick to your suggestion. I mixed up the extracts a bit and added 1 tsp of vanilla, 1/2 tsp of almond emulsion and a scant 1/2 tsp of bakers mystery. OMG, it tastes exactly like the wilton decorators icing! My kids say it's even better! I'm just putting that out there so nobody else makes the mistake of buying the expensive stuff when it's really not needed.

I have used this recipe for my last 3 cake orders and it’s a game changer. Smooth cakes with sharp corners are now so much easier than before. I live in FL and it’s humid year round. This recipe has held up beautifully this summer. Thank you!

You are so right about making this right before you need it, I had made icing and froze it because I knew I would be busy, when I took it out of the freezer, it didn't look right after it thawed. I had to made more right before decorating I loved the consistency and it was so smooth. I won't be making it ahead of time no more

Very Interesting. I recently loss my husband 2 YEARS AGO, and after the loss, I stop everything. Now I am trying to get back into baking, it's actually therapy for me; because it bring back so many beautiful memory that we share in the Kitchen. He use to taste all of my icings and tell me if they were too sweet or not sweet enough. Seeing your husband in the kitchen with you, reminded me of my Rufus. I miss him so much; we did everything TOGETHER. Thank you and your husband for doing this video (TOGETHER), just like Rufus and I would have done. I can't wait to try your recipe and my husband would be very proud of me.

This life is fleeting and the bible calls it nothing but a "vapor". It's hard and it sucks not to be with the one we love but you'll be with him again for all eternity. If he gave his life to Christ before he passed away and you have to, you'll see him again. And the time you spent without each other will seem as if nothing. Get back to baking, have all your memories and enjoy them, and make NEW memories in the life that God wants you to have. You have a purpose and God is STILL doing a great work in you and through you! I was able to grab the LAST shortening at Walmart and THANK YOU! I watched your video on how to do straight edges without the acrylic and this buttercream was perfect for it! I questioned he buttercream but it was worth the effort and it does taste good. Thank you so much for your videos!

The cake was cute but, the most important was the flavor, the consistency of the buttercream. It was smooth, creamy dont' t know what else to say. I'm pretty sure you guy's have just changed my caking life! I'm self taught, only been doing cake orders for a couple months. I live in north western Australia and summer has well and truly hit. I had to stop making my favorite swiss meringue buttercream as it just wasn't holding up. I'm about to decorate a cake with shortening frosting for the first time! A little tip for any Aussies out there PAVLOVA MAGIC IS MERINGUE POWER! I know crazy awesome! Thanks guys x

I just made this using shortening instead of crisco it made I huge differences, it wasn't grainy and when I tested in the bowl to see how smooth it was, girl I just walked away in amazement in how smooth it was. thank you so much

You're very welcome Deborah! Yes, to turn it into chocolate buttercream all you need to do is add 2 cups of cocoa powder to a single batch of either of the icings. Hope that helps. :)

Here’s my problem the only shortening Walmart sells is all vegetable...so wtf am I supposed to do??? I spent money getting stuff for this recipe and I went to baking isle at Walmart and all vegetable was ALL THEY HAD SO WTF

+woahdudette Crisco is perfect, the non veg is not shortening, it is lard, and is different

woahdudette the FDA has made manufacturers REMOVE the "Trans-fats" so all you will find is "Vegetable" shortning. The best recipes now require More added FAT, weather it be from Butter, full fat milk, or both. Baking is much more of a challenge without "Trans-fats"

Here because I'm a 'cake rookie' who's new at this, relatively speaking. I just saw a tutorial about doing mirror cakes, and I know the cakes have to have a great buttercream base before the mirror glaze can be applied. These sound like great recipes to start with, but now I need to find meringue and also that animal-based shortening (we only have Crisco in the pantry right now.)

Thanks for watching! Yes, these icings are awesome! Most Walmarts carry the non-vegetable shortening. Walmart also carries the Wilton brand meringue powder. :)

Hey dolls I used your recipe twice now for some cupcakes that I wanted to make sure the icing didn't slide it was wonderful I was wondering can you Ice a cake with the soft or should it be used for filling only ?

Hi! We use the soft icing to crumb coat and fill only. You CAN use it to ice the outside as well (but we don't). We like a stiffer stronger consistency which is why we use the thicker icing for the outside, but if you want to try the softer icing, just add less milk so it's not so viscous. :) Glad you liked the icing! Hi! That would all depend on what you define as "super sweet'. I personally LOVE it and is the perfect sweetness for me. I've never had any customers or family complain about it being "too sweet". You'd have to make it and just try it for yourself to decide. The consistency does change when you add gel food coloring which is why I always recommend that when you're making the icing that you stop adding milk before you get it to the perfect consistency you want. Add your color, and then once you get the color you want, if the icing is still not the consistency you want, then you can add more milk. Hope that makes sense and hope it helps. Hi!! Just found your videos. I love this recipe, I always used my own but right now im trying a fancier decoration.. so for this my question... which one of the icings is better for buttercream flowers?? I am guessing both but maybe its harder to pipe with the hard one... help! Thank you ^^

Glad you found us Meri! Thank you! The BEST one for bc flowers is the softer consistency which is the 1/2 butter, 1/2 shortening recipe. The thicker one is difficult to pipe. Hope that helps! :)

Hi Edward! Thank you so much. We appreciate the great feedback on this video. The meringue powder makes the icing more firm so that it holds its shape well. This is great if you want to be able to ice your cakes with straight sides and sharp edges, as well as cover with fondant. I hope that helps. Thank you for watching! :)

You're very welcome! Yes, it would be fine. Although the best consistency is to use immediately after making. If you absolutely have to refrigerate it, be sure to take it out of the fridge with plenty of time to let it come to room temp before rewhipping. You may need to add more milk to get it back to the perfect consistency. Hope that helps and thanks for watching! :)

Thank you so much for your kind words and for watching our video. :) If you can't find non-vegetable shortening in your local grocery stores, I recommend calling some of your local cake supply shops to see if they carry high fat ratio shortening. If they don't, then the only way to go will be to order it online from the U.S. and have it shipped to you. There are many brands of high-fat ratio shortening that cake supply websites here in the U.S. provide. I hope that helps and thanks again for watching! :)

Hi Felicia, Not that I'm aware of. You can make it without it. I would just use a lot less milk so that the icing doesn't lose too much stability (which the purpose of the meringue powder is to give the icing stability). I hope that helps and thank you for watching. :)

Hi Laura! I am a home baker and I am just now getting my hands on decorating layer cakes. I used to just slap frosting on the cake and call it a day lol. But now I am obsessed with pretty cakes that look smooth. So far I haven't achieved that yet. My main problem was I was using an all butter recipe. After reading and watching several videos (yours and Edna Dela Cruz's buttercream frosting videos are the best I have seen), I learned that the type of fat used makes a huge difference. Anyway, my question is... if I am lazy to make both the soft and hard icing to frost a cake, will it matter too much if I just use either the soft or hard icing? if I choose to go with soft icing to crumb coat, make a dam and frost the cake, will I still achieve a smooth look? thank you so much for creating videos like these. I have learned a lot! It's crazy how much I know now compared to when I started really getting into it last week lol. I still have a long way to go but I am excited to make progress.

Hi Allyson! LOL. That's funny! That's what my first cakes were like too! LOL. It does matter if you're lazy.... LOL. Just kidding. YES, it DOES matter. The thick consistency dam is what keeps your filling from being squeezed out and causing ugly bulges on the sides of your cake. Plus, for that really nice straight side and sharp corner, you'd prefer to use the thick consistency icing. That's a bit hard, at least for me, to achieve with just the soft icing. At least for someone who cares about how the cake looks lol. You have debunked the mystery for me. I don't know where else I could have learned all these information you graciously share with us. I was supposed to take a Wilton cake decorating class this evening (just to learn how to have a smooth frosting) but the instructor cancelled. I'm glad she did! I will make these two icings today and try and try and try (even if I die trying lol) to achieve a smooth look. Yeap, I watched that other video of yours on how to crumb coat 5 times already lol. Krazy Kool Cakes & Designs I've already watched those teeheehee 😬. Been watching your videos for a few days now. Guess what? My 6 inch layer cake turned out beautiful. I was so happy I called my husband at work and told him to go out so we could facetime lol. I cannot believe I did it. Thank you so much. I could spend my whole life practicing but without the right recipe and techniques I won't be able to achieve what I wanted. I followed both recipes to a T and I am very pleased. The hard icing works extremely well as a dam. When you said do not pipe it right on the edge, that was genius Laura. so many instructors pipe it on the edge. Well, I can talk about how awesome your techniques are but I'm afraid you'd fall asleep lol. Again, thank you so much for the confidence you gave me. From now on I will show up at my husband's family's events with beautiful cakes lol. Btw, my little cake is tiffanny blue with white borders. Oh so pretty!

Hey guys hope you don’t mind me asking more questions can I use just powdered egg whites instead of Wilton mirangue powder . For making this buttercream recipe It’s so difficult for me to get hold off , and blisteringly expensive when I do find it. Just out of my budget really. Hi Dorothy! We don't mind your questions at all. In all honesty I've never used only powdered egg whites to replace the meringue powder which do have powdered egg whites. I wish I knew more details about meringue powder but never really looked into whether or not it's pure powdered egg whites. Have you tried ordering the meringue powder on Amazon? It's pretty inexpensive there and if you have prime, you can get it in just 2 days. The only thing I can suggest is you actually researching what the ingredient difference is (or if there even is a difference) between meringue powder and powdered egg whites. If it's the same exact thing, then I don't see why not. Let me know how it goes and thanks for your question. :)

Hi, I hope you can help. What can vegetarians use to make the stiff frosting? You suggested not using the veg shortening which I totally agree with because I used Trex the other day and I absolutely didn’t like the texture! Someone suggested it to make the buttercream more stable but it did the exact opposite and it felt greasy on my palate 😖 I hope you can help.

That's so wonderful to know Adriana! Yes of course you can easily turn this into a delicious chocolate recipe. You do everything exactly the same but now all you need to do is add 2 cups of your favorite cocoa powder to the recipe (for one batch of course). You may need a little bit more milk to get the same creamy consistency because the chocolate absorbs some of the moisture. It's absolutely delicious when turned into a chocolate buttercream. A million thanks for this awesome tutorial! I have struggled at finding the perfect consistency without the taste being sacrificed. Love that it is so smooth and creamy.I live in a more humid climate so only used about 7 tbsp of milk. It pipes beautifully and my husband said it is truly the best he has ever had , I agree. I made this icing for a cake I did over the weekend and it was fabulous 🎉 it was super easy to add food coloring and it still came out just as nice! My question to you is, do you use pure cane sugar or can you use this recipe with let's say a generic beet confectioners sugar?

Hey I have used your regular buttercream icing and it's so good that's the only receipe I use, ok I want to make the Lemon buttercream what would I have to use. Do you have a video for Lemon buttercream! Thanks!😊

Hi Juqetta! Okay so to make lemon buttercream all you have to do is only use half of the amount of vanilla extract in the recipe and the other half you substitute it with lemon extract. To make it look pretty you can add a tiny bit of yellow color to your icing so the color matches the flavor. Hope that helps and thanks for watching. :)

I have been following your KZbin channel for years now. Thank you so much for taking us along on your journey. I do have a question. I have never used buttercream before. If I wanted to frost cookies and be able to stack them once the buttercream sets, can I use the soft recipe or should I stick with the hard recipe?

You're very welcome! Thank you for watching. :) For covering cakes with fondant, you still want to use both buttercreams. The soft consistency for crumb coating and for filling, and the thick consistency for the outer coat which will be directly under the fondant. I hope that helps. :)

Very informational! Walmart no longer sells the high-fat ratio shortening. Everything is the greasy all vegetable shortening!😕 I'm having a hard time looking for it in any markets and online! What do you use now? Where do you get it, please???

Yes, I have received a lot of emails, messages, etc. from LOTS of Cake Artists all over the country that are experiencing trouble because their local Walmarts no longer carry the non-vegetable shortening. Thankfully we have not had that come our way. But, I have suggested to everyone that they visit their local cake supply as many of them readily sell good quality high fat ratio shortening. Last resort is just ordering it online. I hope that helps and thanks for watching! :)

Walmart online doesn't have the one you use unless I missed it.🤔 If you have a link we can refer to, that would be greatly appreciated. You're very welcome! We appreciate you watching. If you're not necessarily looking for the cake to look professionally iced with straight sides and ultra sharp edges and are just going to dirty ice for you to enjoy the cake at home then you can certainly just ice with the stiff consistency. :)

Absolutely love love love all your tutorials and this is by far the best frosting I have ever had unfortunately where I am at I cannot find the shortening that you guys used I have searched Walmart I don’t know if they stopped making it but is there any thing else I can use or do you have a link where I can order it from I can’t even get it on Amazon

Hi Laura, I just wanted to mention about the GV Walmart Brand shortening. It's not a hi fat ratio shortening. It is a step up from regular vegetable shortening, which is better than regular shortening as you had mentioned. It does contain trans fat, as high ratio shortening does not. Normal high ratio shortening brands like CK and Sweetex has more emulsifiers in order to cream liquid and air. Personally I have not tried GV shortening, but since you and your husband has been using this and swears by it, then I will try it myself :) I'm a Criso using boy in my buttercream :) Oh and btw awesome video :) God Bless

+picantesworld77 Hi There! Glad you liked the video! Thank you! :) I always recommend NOT using Crisco in buttercream. Not if you want to achieve really smooth sides and sharp edges. In reference to the GV shortening, it actually IS a "high fat ratio shortening". It is a more "solid" shortening and we prefer it because it DOESN'T have as many emulsifiers as Sweetex or CK shortening. Emulsifiers as you know increase plasticity and with our types of custom cakes, that is exactly what we're trying to avoid. Not knocking CK and Sweetex. I've used them as well and they work well to a point, but the GV brand actually works better. At least for us it does. I know you said you haven't tried it so I'd encourage you to give it a go. Hi Zulema! Thank you so much for your kind words. I'm glad you've enjoyed our videos. I don't recommend any cake ever be out in warm weather. It's a disaster waiting to happen. If the event will be held outdoors and especially during warm weather you want to make sure the cake is indoors and only take out at the last possible moment before slicing. No icing exists that is made for warm weather. I hope that helps. :)
