One suggestion for this one. My mother covera the entire lid with a cloth so that the condensed water doesn’t drop on the khaman and allows it to rise fully.

Entire lid or the mouth of the dish. If the top lid is covered then water will anyway drip on the Dokla. Pls clarify.

Red color is liye hota h kyunki eno achhe se dissolve nhi Hua hota, eno ko achhe se crush krke daliyo. 20 min tk cook krna hota h fir toothpick dalkr check krna hota h, agar besan chipk Jaye to cook nhi Hua hota. Mold greese krna zruri h, wrna cook hone k baad nikalne m problem aati h.

Did you pre heat the steamer ? And also did you open too soon ? Another reason could be not enough gap between Gas / Base of vessel & the Mould in which batter is steaming ?

@@nehadeepakshah yes I preheated the steamer, didn’t open it too soon also didn’t open in between. No gap between gas and vessel. The follow exact measurements time and method. I made total 5 batch 3 of them turned exactly like yours which i am very thankful for your recipe. But 2 of them sink from center so i just thought to share with you about my query.

You have to stir well and at the end add eno and baking soda and then dont stir hard just 1 or 2 motion of stir...if you stir hard all the bubbly gas effect of eno and baking soda is gone.....and cut little smaller pieces for tadka to penetrate better....try the tadka with more oil and very less water or no water to avoid that extra watery and saugy khaman

You can also make this in the Kadhai, Put a ring mould at the bottom. Water and then place the mould..

That only happens when you don’t mix it well. So basically when Haldi & Baking soda doesn’t get properly mixed it becomes red on steaming. Don’t worry, it won’t happen here
