↓Frequently asked questions↓ When you bake this for the first time, the result might not be perfect. My first cake was also cracked.(I've been a chef for over 15 years though.) But I'll give you some tips to help you succeed sooner with just a little practice. Q. My cake didn’t rise well. Why? A. The reason for this is that your meringue was too soft or you over mixed the cake batter and meringue. The more you mix the cake batter, the more the meringue bubbles will break and the less your cake will rise up. Q. My cake rises well but shrinks a lot after it cools down. Why? A. The reason for this is that your cake was not baked enough, or that your meringue was over whipped, or your meringue was made of big air bubbles so it’s fragile. To make your meringue stable, make sure your meringue is very cold, and add all of the sugar at first and whip at medium speed. If you use a stand mixer, at medium low would be better. But if you whip by hand, you shouldn’t add all the sugar at once, instead add in three parts. Q. My cake rose too much and the top cracked. Why? A. The reason for this is that your cake batter is too fluffy. When your cake batter is very fluffy, it will rise well but also tend to crack on top. Make your meringue a bit softer for the next time. Q. How to adjust my cake pan to this recipe? A. Multiply the length of your pan × the width(cm) of your pan(cm). (ignore the height) = A Divide A by 225 (my recipe pan size) = B Multiply each ingredient by B = the amount of ingredient you need(grams) *Another way Fill your pan with water and weigh. (grams)= A A ÷ 1125 = B Multiply each ingredient by B = the amount of ingredient you need(grams)

I've always had issues with my sponge cakes but I tried this recipe and it turned out perfectly. This is the first sponge cake recipe that I've seen use AP flour rather than cake flour (which I don't think we have here) and it still works fine. The only change I made was leaving the cake in the oven longer.

I’m definitely trying this. It looks just lovely. My only issue is that as a pastry chef I have always been told that eggs and egg whites whip up to a much greater volume when at room temperature ? This might be different in Taiwanese pastries .

Room temperature egg white produces more volume, but it is more fragile. Since you are a professional chef, you may be able to do it at room temperature, but for beginners, cold egg whites will produce a more stable and less fragile meringue😉

Hi, thanks a lot for your tutorial and tips! My cake still deflates as it cools down, although I try my best with the merengue. Can there be any other issue of deflation apart from underbaking or weak and unstable merengue? Thank you for trying my recipe! I use 35~40g egg white per one egg. Japanese people like the taste of eggs, but many people overseas do not like it. I suggest adding a little more vanilla, so you won't feel eggy flavor so much. Arigato☺

I tried baking this cake twice. While baking in the oven, it puffed up to almost double the size of the mold. But afterward, it shrank and wrinkled down to a tiny portion inside the mold. Both of my cakes got ruined this way, even though I carefully followed all the steps each time. I’ve lost interest in baking cakes because of all the wasted ingredients and ruined cakes. Could you kindly help me? How can I make sure the cake turns out properly? It shouldn’t shrink down. The spongy part just becomes a small, dense portion. What’s the solution for this?

I'm not OP, but I've had this issue in the past. Whip the meringue slower. Like, whip it at a speed where it takes double the time to whip. She also mentions it in the video that the whipping speed causes exactly what you described.

Self-rising flour is not available in Japan, we could get it at imported grocery stores, but we generally don't use it, I don't use it for baking. Hope your cake turns out better next time:)
