Oh my goodness, salmon!! What wonderful neighbors you have!! I live in central Florida and, well, no salmon here except at the grocery stores or Sam's Club. We do however get mangos and avocados. I have not freeze dried them yet because I am a real newbie to freeze drying and I did have an issue with my unit. BTW, I called Harvest Right directly and spoke with their customer service, I did not make an appointment and they were very friendly, helpful and efficient. The defective part was sent out in a timely manner. I just had to wait a little over a week. I received the part today and I'm up and running again!!!

Thanks for trying this out with salmon. I am looking into getting a freeze dryer to use for meal prep/storage since we fish and are lucky to have plenty of salmon. I think the salmon might do better if (as others stated) the skin and brown fat are removed. I would also try cutting into chunks for easier hydration post-freezedrying. Then coat with some olive oil and seasonings, and air fry--yum.

@@drtmvoss I’m would totally do the same next time as you stated - will make it much better to eat later on and I bet will be faster freeze drying. Great tips!!

Great Smoked Salomon that works for me, I cold smoke the fish for 15 mins and than cook like I normally would. Perfect amount of smoke :)

sorry for the delayed response, I am not sure... I would try freeze drying with the skin on cut into smaller pieces and see if it seems like it freeze dries well. I think it would!

Great video, but skin on prob won't work for long term. There's a lot of oil in the skin and fat in between. I skinned mine and scraped off all of the brown fat before freeze drying

I'm so fucking jealous! Girl! All i want to do is feed EVERYBODY and I've been looking for ways to make sure that my food doesn't go to waste. I'm only a family of three and still haven't learned how not to feed everyone. It used to be my neighbors but I live in apartment complex and they moved to greener pastures. Maybe I need to bake again. It feels like it's a whole different chemical response. But...I'll still have s surplus issue.

Your oxygen absorbers may not totally remove all the "air." Remember, air is not all oxygen . It is ok for the bag to still have "air" in it.

You do know each tray has a max load of 2.5lb. That’s the amount of food allowed to be on each tray to not over work the unit. And you need to weigh each tray to check if EVERY tray is dry. Weighing one tray will not tell you everything is dry. Each salmon weigh differently. You keep weighing like that and you’re going to find your food rancid. I’ve ran things for over 40 hours and weigh check them every times. You need to be positive that it’s dry and not assume. Tip: let it run 2 hours for the extra hours to make sure.

There isn’t really a maximum weight of food that the machine can handle. The machine doesn’t care how heavy/much food is in each tray. It acts on water not food. Each food has varying amounts of water weight so each will have a different limit. For example: my XL easily dries 50 pounds of raw meat (about 70 -75% water) but doesn’t dry 50 pounds of milk (85 - 90% water) very efficiently.
