Persian Teahouse Omelette - اُملت قهوه خانه ای بازار تجریش

This super simple tomato omelette is a popular breakfast item in teahouses all over Iran, where workers stop to eat a quick bite on their way to work. This video was filmed at a small hole in the wall teahouse/cafe in North Tehran's Tajrish district, at one end of the famous Tajrish Bazaar!
Because of its simplicity and ease of production, this recipe is also a favorite with hikers, mountain climbers and picnic goers! Quite often, university students live on this omelette because of its low cost and simplicity. Get some tomato paste, a couple of eggs and a piece of flatbread and you have a tasty and nutritious meal! And because of the tanginess of the tomato paste, a lot of places do not add any salt or pepper to this omelette unless you request it! Enjoy!

Persian Teahouse Omelette Recipe اُملت قهوه خانه ای بازار تجریش Ingredients: 2 Large Eggs 3 Tbsp Tomato Paste + 3 Tbsp water (canned tomato paste in North America is thicker than tomato paste sold in Iran). 3 Tbsp Neutral Oil (such as Vegetable Oil, Grapeseed Oil, etc.) Salt/Pepper/Red pepper or Cayenne (if using, to taste) Instructions: Heat 3 Tbsp oil in a medium sized non-stick skillet (or frying pan) over medium heat, until shimmering (~ 2 minutes). Add the tomato paste and cook for 2 minutes while stirring constantly. The tomato paste will become a couple of shades brighter in color. Break 2 eggs into the tomato paste and stir occasionally to make sure the yolks are scattered around. A couple of minutes will do, and you can stop cooking earlier to leave it runnier, if that is what you like, but be careful not to burn the eggs. Because of the tanginess that tomato paste adds, the teahouses usually do not add any salt or pepper, unless you ask them. Add salt and pepper if you’d like. Serve the Persian Omelette immediately (in the pan it was made in). This omelette can be served with your favorite flatbread and sliced onion, along with hot sweet team. This is normally served for breakfast and can be accompanied with other favorite breakfast items such as butter, jam, honey, feta cheese and walnuts! You can decorate the top with your favorite chopped herbs, such as basil, parsley and cilantro. Enjoy!
