This looks great! You are lucky to have family to learn recipes from. I wanted to say my grandmother used her hands when cooking a lot. I am never nervous about using my hands to mix, they are nature's implements. You mentioned making this ahead for a potluck, I assume you would keep cool but them bring to room temperature for serving? Thanks for all your hard work!

This looks like one of those dishes that (especially when made with the can mold) look really impressive and time-consuming but really aren't. Those are my favorite dishes to bring to pot lucks because everyone assume you spent so much time and energy on it and you get praised :-P I'll -definitely- be making these someday

dont say "on point" if other people wont think so. way too much chile for the average person. gonna have to cut it down use leon instead of lime and yellow mustard to get a similar sour taste. Aji amarillo just 1/4 the original amount. you will scare away all non peruvians.
