Causa Limeña is a wonderfully simple yet sophisticated Peruvian dish- it comes in many shapes and colors- I chose to use three different kinds of potatoes. The word comes from the Quechua word 'Kausay' which can be roughly translated as 'lifegiving' or 'that which nourishes', which is also the word for potato.
