I'm Peruvian and we have a soup called "aguadito". It has chicken, rice, and a cilantro purée which gives the soup a deep green color. So I can see the Peruvian influence in this dish. It looks delicious, great job!

I am a Chinese and I travel in Peru this year. The soup there is amazing, especially the one I had in in a small vendor in Cusco , I like the rice and chopped celery in it.

I roast my chicken first until cooked through and then when cool enough to handle I separate the meat from the bones/skins and then out the bones, skin and wings in water and simmer until it's a deep color. Roasting adds so much flavor!

We have a similar soup in Brazil, we call it Canja. Except the cilantro is only chopped and we don't ad the green pepper. It's a great soup :)

2010Charon I also eat Canja mostly when I'm sick haha Well, there are people that do exactly how she does, except for the geen pepper and there are those who do it with the leftovers of roasted chicken or "in sauce" chicken, just adding water and rice and vegetables and correcting the salt and pepper as it cooks

I think the serrano chili is mexican. Its like making a typical american dish with an ingredient that will change the taste that comes from Australia! What is the difference? They both speak English.... that is what Americans think of L.A., and sometimes, the only thing that we have in common is the Spanish, and evem that may be so different, you wouldnt imagine. Peruvians have the best hot peppers, look for them.

Potatoes don't freeze well in soup or any dish. period. Probably best to not include potatoes if freezing.

Hey, whenever I boil chicken in water, the fat sort of starts to separate and floats up or clings to the sides on the pan. Its like white bits of soft chicken fat. I hate that. Is there any way to avoid that? or to take it all out?

You can put a 4-5 lb chicken into a pressure cooker and get a cooked chicken and stock in 20 minutes. I just can't do 4 hour reductions anymore as much as I love being old school. 😉

I don't usually like much more than carrots and noodles or matzo balls in my Jewish penicillin, but that soup looks scrumptious! Forgive the unsolicited correction, but a stalk of celery is the whole plant. What people commonly (and erroneously) refer to as a stalk of celery is correctly called a rib. I have even more uninteresting and uncompelling minutiae to share if anyone is suffering from insomnia.

I LOVE garlic but this recipe does not allow the garlic to cook at all... so you got this super super strong in your face garlic taste that overwhelms any other flavor in the soup. i would press the garlic and saute it in butter before adding to soup.

the wings are injection sites for steroids and anything else. so I don't do wings due to the residue left in those sites.

tx tea yes, but organic does not prevent them from being injected. it only protects your market bird for 45 days. what happens before??? find a reliable small farm. that's safest, but big corps going into organic label and that doesn't prevent them being raised with lots of chemicals. chemicals are mostly labeled organic. vit k is used extensively. it destroys liver and kidney in dogs along with other stuff used routinely in raising chickens.

tx tea organic is like grass fed. yes they can eat grass and have 45%grain fed to them. but lots of chemicals are considered natural and organic but they are still chemicals. know who you are dealing with, see where raised, what fed. ask questions. I knew someone raising grass fed that had feed mill put pesticides in grain so that they had fly protection. growers get away with allot.

This is stupid, boiling chicken for 3,5 hours and then adding water?? Too long! Adding water changes the flavor. Adding spiced to cold water?? WHAT?! Just boil the chicken and add other ingredients while you're cooking the chicken!
