I made it and it's just excellent! So far I've had it on a tamal, boiled egg, green salad, and get this.. on some chocolate! 😋

All you need in life is this sauce lol I made some a few days ago and it has gone on everything we eat. I used 8 serranos but everything else I didn't change. Tonight inwas craving some Korean glass noodles. I used just enough broth to keep the noodle loose in the bowl. I topped them with Sriracha sauce, the aji verde, and some Pico de gallo....o....m....g.....as long I have rice beans, Pico, and this sauce I'm happy in life now and can make any meal 🤣🤣🤣

Authentic Peruvian ahi verde salsa also contains huacatay paste. It's a mint Peruvian paste that is also an ingredient used in salsa verde Peruana.

We keep it for about a week to a week and a half if it even lasts that long!

Nope...avocado oil...you want a non flavor oil and he's missing the main ingredient..

Wow. I've been looking for this. I love Peruvian food and ESPECIALLY the crack sauce. My only fear if I had this in my fridge at all times it could be scary. One question, how long would you say the sauce will last in the fridge? Thanks again. Just subscribed.

Thank you for watching and subscribing! I would say at most 2 weeks but preferably 1 week, because the cilantro taste better fresh. The lime, ,mayo, and vinegar helps preserve it longer. At our house its gone before 5 days. Just make sure to start shaking it after a week because it will separate a little bit.

Besides the Parmigiano cheese ... authentic Peruvian salsa verde contains guacatay paste.... it's a Peruvian mint paste also used as an ingredient for the ahi verde Peruvian salsa.

Ive seen recipes where the sauce is red rather than green, so just wondering what the difference is, and what is the most traditional version?

in Peru they have 100s of sauces but something like this is very popular, the red sauce is probably mayo base with red chipotle and lemon, very delish!

Maybe the one you have seen it was made with Rocoto, it looks like a red bell pepper. The other chile we use is ají amarillo. This sauce looks really yummy but in Peru we don’t have jalapeños. So for me this is a fusion of Mexico and Peru.❤

If you use cream cheese, cotija cheese, chile Amarillo paste, huacatay, and do everything else the same (except Cilantro because the huacatay replaces that. Or just use Cilantro and no huacatay) you'll get a more traditional aji verde. But this recipe is so simple without having to try ans find ingredients you don't typically already have and it tastes absolutely amazing on ANYTHING.
